Ingredients
  

  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 2 pieces chicken breasts skinless and boneless
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder, then add them to the skillet. Cook until golden brown on both sides.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chicken broth and bring to a boil.
  • Stir in the rice and mixed vegetables. Place the chicken breasts on top.
  • Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the chicken is cooked through.
