Heat the olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt, pepper, garlic powder, and onion powder, then add them to the skillet. Cook until golden brown on both sides.
Remove the chicken from the skillet and set aside.
In the same skillet, add the chicken broth and bring to a boil.
Stir in the rice and mixed vegetables. Place the chicken breasts on top.
Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the chicken is cooked through.
Remove from heat and let sit for 5 minutes before serving.
