- 8 ounces penne pasta
- 1 cup mixed vegetables peas, corn), carrots
- onion small, finely chopped
- 2 cloves garlic minced
- 1 tsp ginger minced
- 1 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 tsp garam masala
- salt to taste
- 2 tbsp vegetable oil
- cilantro leaves for garnish
Instructions
- Cook the penne pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the finely chopped onion and sauté until translucent.
- Stir in the minced garlic and ginger, and cook for about 30 seconds until fragrant.
- Add the cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala. Mix well to coat the onions with the spices.
- Add the mixed vegetables to the skillet and sauté for a few minutes until they start to soften.
- Stir in the cooked penne pasta and toss to combine with the vegetable-spice mixture.
- Season with salt to taste and cook for an additional 2-3 minutes to heat through.
