    I don’t trust squid ink pasta. It just sounds weird. Also I overcooked mine because the package directions said one thing and my pot did another, and the texture was meh. Won’t make again.

    I followed it exactly but my sauce turned grainy. I think I overheated the milk/flour roux or let it boil too hard. Tasted fine, just not smooth like in the description.

      Ugh, I’m sorry that happened! Grainy cheese sauce is usually from the roux getting a bit too hot or the milk not being added slowly enough. Next time try whisking the milk in a slower stream and keep it at a gentle simmer (not a hard boil). Also, once you add the cheese, keep the heat on low—boiling can make it split and get grainy.
