Ingredients
  

  • 2 lbs pork shoulder trimmed
  • 1 onion coarsely chopped
  • 4 cloves garlic
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • 4 corn tortillas small
  • 4 eggs large,
  • 1 cup refried beans
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cilantro chopped fresh
  • 1/4 cup diced tomatoes
  • 1/4 cup red onion diced
  • avocado sliced, for serving

Instructions
 

  • In a slow cooker, combine the pork shoulder, onion, garlic, chili powder, cumin, oregano, salt, black pepper, and chicken broth. Cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shreds with a fork.
  • Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Set aside.
  • In a large skillet, heat the vegetable oil over medium heat. Add the shredded pork and cook for 5-7 minutes, until crispy and browned.
  • While the pork is cooking, heat a separate skillet over medium heat. Warm the corn tortillas on both sides until pliable.
  • In the same skillet, fry the eggs to your desired doneness.

      This recipe can serve quite a bit since it uses 2 lbs of pork. I’d say around 4-6 people depending on how hungry they are! As for the pork shoulder, it’s a specific cut from the pig, usually found in the meat section of grocery stores. Just ask the butcher if you can’t find it.
