Ingredients
  

  • 4 slices bacon
  • 1 bunch kale stems removed and leaves torn into bite-sized pieces
  • 2 cloves garlic minced
  • 4 eggs
  • Salt and pepper to taste

Instructions
 

  • Heat a skillet over medium heat and cook the bacon until crispy. Remove the bacon from the skillet and set aside.
  • In the same skillet, add the minced garlic and saute for 1-2 minutes until fragrant.
  • Add the kale to the skillet and cook until wilted, about 5 minutes.
  • Meanwhile, in a separate skillet, fry the eggs to your desired doneness.
  • Crumble the bacon and sprinkle it over the sauteed kale.
  • Serve the sauteed kale topped with fried eggs. Season with salt and pepper to taste.

      Yeah, I’ve definitely had garlic turn on me if the pan runs hot. Even “medium” can be too aggressive depending on the stove. Glad it still tasted good once you lowered the heat!

      Totally get that—4 eggs is hearty! I’ve found it depends on the size of the bunch of kale. If my bunch is smaller, I usually do 2–3 and it’s perfect.

      Yeah, seasoning earlier makes a big difference. I usually toss the kale with salt (and even a pinch of pepper or chili flakes) right after the garlic, otherwise it can taste a little flat.
