Ingredients
  

  • 1 chicken
  • 2 lemons
  • 4 cloves garlic
  • 1 tbsp thyme dried
  • 1 tbsp rosemary dried
  • 1 tbsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Rinse the chicken inside and out, then pat dry with paper towels.
  • Cut one lemon into halves and squeeze the juice over the chicken, inside and out.
  • Place the lemon halves inside the chicken cavity, along with the garlic cloves.
  • In a small bowl, mix together the dried thyme, rosemary, parsley, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
  • Drizzle the olive oil over the chicken, then place it in a roasting pan.
  • Slice the second lemon and arrange the slices around the chicken in the roasting pan.
  • Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

      Could be your oven runs hot, yeah. Also, a smaller chicken cooks faster—1:30 might’ve been too long. Did you use a meat thermometer in the thickest part (not touching bone)? That usually fixes the dryness for me.

      Ugh, that’s frustrating. If you reached 165°F but it’s dry, it might be over-roasted time-wise or the skin didn’t get enough oil/rubbing. Next time try pulling it as soon as the thickest part hits 165°F and make sure the resting is 10–15 min (covered loosely).

      Yeahhh I’ve had that happen too. I think the lemons make it *sound* lighter but the rub still hits salty if you dump it in all at once. Next time I’ll do half the salt in the mix and then taste the seasoning (careful, it’s raw herbs).

      Hmm I tried it but mine wasn’t that juicy… I’m thinking my oven runs hot and I pulled it early. Also I used 1 lemon instead of 2 and maybe that’s why it felt a bit plain? Still tasted good though.
