Preheat the oven to 375°F (190°C).
Rinse the chicken inside and out, then pat dry with paper towels.
Cut one lemon into halves and squeeze the juice over the chicken, inside and out.
Place the lemon halves inside the chicken cavity, along with the garlic cloves.
In a small bowl, mix together the dried thyme, rosemary, parsley, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
Drizzle the olive oil over the chicken, then place it in a roasting pan.
Slice the second lemon and arrange the slices around the chicken in the roasting pan.
Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
