If you’re craving something light yet satisfying, sashimi salad with soba noodles checks every box. It’s a refreshing mix of clean flavors, vibrant colors, and nourishing ingredients that come together in one beautiful bowl. Perfect for warm days or when you want a meal that’s both healthy and exciting, this dish delivers on taste without weighing you down.
At the heart of this salad is sashimi-grade fish. Tuna and salmon are classic picks, but yellowtail or even scallops can work just as well. The key is using the freshest fish you can find. Slice it thinly so it pairs well with the delicate textures of the noodles and greens.
Soba noodles, made from buckwheat, add a nutty flavor and a slightly chewy texture. They’re quick to cook and can be served chilled or at room temperature. After boiling, rinse them under cold water to stop the cooking and remove excess starch. This helps them stay light and separate in the salad.
Now for the greens. A mix of crisp romaine, baby spinach, or arugula works nicely. Add julienned cucumbers, thinly sliced radishes, avocado slices, and shredded carrots for extra crunch and color. You can also throw in some edamame or seaweed salad for even more variety and flavor.
What ties everything together is the dressing. A simple soy-sesame vinaigrette made with soy sauce, rice vinegar, sesame oil, a touch of honey, and grated ginger gives the dish a tangy, slightly sweet punch. Drizzle it generously over the salad and noodles, then toss gently to combine.
Top everything with the sliced sashimi, a sprinkle of sesame seeds, and perhaps some chopped scallions or a squeeze of lime. For a little heat, add a dab of wasabi or a few slices of chili.
This sashimi salad with soba noodles is everything a modern meal should be, simple, nourishing, and full of clean flavors. It’s ideal for lunch or dinner when you want something beautiful, balanced, and fast to make.

Just okay. Soba noodles were a bit slippery, and I didn’t have cilantro sooo I used parsley instead. Not the same.
Delicious! Made it for a summer BBQ and everyone loved it. So colorful and healthy!
OK, but isn’t this just fancy sushi? I’m not convinced it’s a salad. 3 stars.
ehhh, i thought this would be too complicated. turned out great tho. 4.
Y’all, it did not taste good. My fish was fishy and the sauce was too sour. Won’t be trying this again.
Sorry to hear that! Maybe the fish wasn’t fresh? Sashimi should be tasty, but sometimes it can go wrong. Did you try using different fish or adjusting the dressing?
The ingredients seem way too fancy for a simple salad. I dont have half these herbs. Just regular greens should work.
Fancy ingredients? I dont know. Just mix whatever you have, it’ll still taste good! Just make sure that fish is fresh, or else 🤢.
I totally get what you mean! Not everyone has a full herb garden at home. I think just using regular greens would be fine. Maybe add a bit of lemon for some zing?
No way I’m eating raw fish. This dish is not for me.
This was amazing! The sashimi was so fresh. Definitely a 5/5!
Really simple and quick to make, but I think it needed more crunch. Maybe add some croutons next time?
I dunno, croutons in a salad with fish? Sounds kinda weird to me. But hey, if you like it, go for it!
Croutons sound great! I love that extra crunch too. Maybe some toasted nuts would be good as well!
This is such a refreshing salad! Loved how the flavors combined. Will definitely make it again!
This salad was so fresh and delicious! I can’t get enough of the flavors. Will definitely make again!
Great recipe! I subbed shrimp for the fish and it was fab! Love the combination of flavors. 4 stars.
So many ingredients to buy! Can’t I just use regular ol’ fish?
Honestly, this was just okay. The dressing was a bit off for my palate.
I totally get what you’re saying! The dressing can be hit or miss. I added some chili flakes to mine, and it was much better! 🌶️
Yummy! But I added extra lime because I love that tangy taste! 😋
Extra lime sounds awesome! I might try that next time. 😊
Yum! But I think I added too much ginger, it was a bit overpowering. Next time, I’ll go easy on it.
5 stars! I loved the mint and cilantro, gave it such a fresh taste. Plus, so healthy!
Looks impressive, but sashimi scares me. Isn’t it dangerous if not prepared right?
Not sure if I like the idea of noodles in a salad… it felt weird. Might stick to regular salads.
I was skeptical about using raw fish, but it turned out amazing! Will make again for sure.
I’m so glad you enjoyed it! Raw fish can be a bit daunting, but it sounds like this recipe turned out perfectly for you!
Raw fish? Eww, that sounds gross! How can you be sure it’s safe? I’m not convinced about this dish.
This sashimi salad is life-changing! 😍 The fresh flavors are unbeatable! Easy to make too.
Sashimi in a salad? Weird combo but surprisingly tasty. I added avocado too, very yum!
Sounds interesting! I never thought of putting sashimi in a salad. Gonna try it with some shrimp next time!
Too complicated. Why not just cook the fish? I don’t get all this raw stuff.
I was a bit iffy about raw fish, but this was surprisingly good! The dressing made it so tasty. I’m a convert!
Too many herbs for my taste. I never even heard of half of ‘em! #OutOfMyLeague
Uh, why would you use raw fish? Not safe! Definitely not my thing! 1 star.
Raw fish? No thanks! I’ll stick to cooked meals. This ain’t it for me. 2 stars.
I get your concern about raw fish, but if it’s sashimi-grade, it’s actually safe! I love this recipe, 5 stars from me!
This salad is amazing! So fresh and tasty. The fish was perfect! 5 stars!
Yum! My family loved it! Didn’t have mint, but still turned out great! Will make again.
Can I use regular pasta? No time to find soba noodles. 2 stars for the idea.
I tried this with chicken instead of fish, not sure it works. Kinda bland. 2 stars.
So many ingredients! Is this really neccessary? I just wanted a quick meal.
I get that it looks like a lot, but trust me, the flavors are worth it! Sashimi with those fresh herbs is amazing!
I tried this recipe but didn’t like the sesame oil. It overpowered everything. I would give it a 2.
Great recipe! Super easy to follow and perfect for summer! 🌞
I like it, but my husband said it’s too healthy. He wants fried food. 😂 3/5.
My husband loved it, but I prefer my noodles warm, ya know?
That fish looks raw. I ain’t eating that! Cook it first other wise eew.
Sashimi is meant to be raw! It’s actually super healthy and safe if you get good quality fish. You should definitely try it before saying eew!
So yummy! I forgot the peanuts but it was still delicious! Will make again! 🌟🌟🌟🌟🌟
Glad you enjoyed it! Peanuts would’ve been great, but it sounds delicious without them too. Can’t wait to try it myself! 🥗
Yummy sounds nice, but no peanuts? How can you call it a sashimi salad without those?! 🤔
