Cook the soba noodles according to package instructions. Drain and rinse with cold water.
In a large bowl, combine the cooked soba noodles, salad greens, cucumber, carrot, green onions, cilantro, mint, and basil.
In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, lime juice, grated ginger, and minced garlic.
Pour the dressing over the noodle and salad mixture and toss to coat.
Divide the salad among serving plates and top with the sliced sashimi.
Garnish with chopped peanuts, if desired, and serve with lime wedges.
