Ingredients
  

  • 1 lb ground pork
  • 1 cup mushrooms sliced
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 1 tsp thyme dried
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 eggs
  • 2 Green onions sliced
  • parsley chopped, fresh

Instructions
 

  • In a large skillet, cook the ground pork over medium heat until browned and cooked through.
  • Remove the pork from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms, diced onion, and minced garlic.
  • Cook until the mushrooms are tender and the onions are translucent.
  • Add the cooked pork back to the skillet and stir to combine.
  • Season with dried thyme, salt, and black pepper.
  • Create 4 small wells in the pork mixture and crack an egg into each well.
  • Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
  • Remove from heat and garnish with sliced green onions and chopped fresh parsley.
  • Serve hot and enjoy!
