Ingredients
- 1 lb ground pork
- 1 cup mushrooms sliced
- 1/2 cup onion diced
- 2 cloves garlic minced

- 4 eggs
- 2 Green onions sliced
- parsley chopped, fresh
Instructions

- Remove the pork from the skillet and set aside.
- In the same skillet, add the sliced mushrooms, diced onion, and minced garlic.
- Cook until the mushrooms are tender and the onions are translucent.
- Add the cooked pork back to the skillet and stir to combine.
- Season with dried thyme, salt, and black pepper.
- Create 4 small wells in the pork mixture and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
