Ingredients
- 100 grams linguine pasta Use whole wheat for added fiber.
- 1 tablespoon olive oil Extra virgin is best.
- 2 cloves garlic Finely chopped.
- 1 cup cherry tomatoes Halved.
- 1 cup spinach Fresh.
- 1/4 teaspoon red pepper flakes Optional for heat.
- to taste salt and pepper
- 2 tablespoons Parmesan cheese Grated, for serving.
Instructions
- Cook the linguine pasta according to the package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add cherry tomatoes and red pepper flakes to the skillet. Cook until the tomatoes begin to soften.
- Stir in the spinach and cook until it has wilted.
- Add the cooked linguine to the skillet and toss to combine. Season with salt and pepper to taste.
