  • 8 pieces Lamb chops Choose rib chops for even cooking
  • 2 tablespoons Olive oil For seasoning and grilling
  • to taste Salt For seasoning the lamb
  • to taste Black pepper Freshly ground, for seasoning
  • 1/3 cup Fresh mint leaves Chopped for the sauce
  • 1/4 cup White wine vinegar For the mint sauce
  • 2 tablespoons Sugar To sweeten the mint sauce
  • 1/4 cup Water To adjust the sauce consistency

Instructions
 

  • Season the lamb chops with salt and black pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook the lamb chops for 4-5 minutes per side for medium-rare, or until cooked to your desired level of doneness.
  • In a small saucepan, mix together the mint leaves, white wine vinegar, sugar, and water.
