Ingredients
  

  • 3 cups zucchini diced
  • 2 cups ziti pasta uncooked
  • 2 cups Tomato sauce marinara
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cook the ziti pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Add the diced zucchini to the skillet and cook until tender, about 5-7 minutes.
  • Stir in the tomato sauce, dried oregano, salt, and black pepper. Simmer for 5 minutes.
  • In a large mixing bowl, combine the cooked ziti pasta, zucchini and tomato sauce mixture, and ricotta cheese. Mix well.
  • Transfer the mixture to a greased 9×13-inch baking dish.
  • Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes before serving.
