Ingredients
- 3 cups zucchini diced
- 2 cups ziti pasta uncooked
- 2 cups Tomato sauce marinara
- 1 cup ricotta cheese
- 2 cups mozzarella cheese shredded
- 1 cup parmesan cheese grated
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper freshly ground
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the ziti pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the diced zucchini to the skillet and cook until tender, about 5-7 minutes.
- Stir in the tomato sauce, dried oregano, salt, and black pepper. Simmer for 5 minutes.
- In a large mixing bowl, combine the cooked ziti pasta, zucchini and tomato sauce mixture, and ricotta cheese. Mix well.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
