This Baked Mushroom Chicken is a delicious and easy recipe that’s perfect for a quick weeknight dinner. Juicy chicken breasts are smothered in a creamy mushroom sauce and baked to perfection.

Ingredients
  

  • 4 pieces chicken breasts boneless and skinless
  • 2 cups mushrooms sliced
  • 1 can cream of mushroom soup 10.5 oz can
  • 1 cup chicken broth low sodium
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until they are golden brown and any moisture has evaporated, about 5 minutes.
  • Place the chicken breasts in a casserole dish. Season them with garlic powder, onion powder, salt, and pepper.
  • In a mixing bowl, combine the cream of mushroom soup and chicken broth. Pour the mixture over the chicken breasts.
  • Top the chicken and soup mixture with the cooked mushrooms.
  • Cover the casserole dish with foil and bake in the preheated oven for 25 minutes.

      Good catch about the broth—low sodium still varies a lot by brand. I’ve had the same issue when I accidentally used a thicker/concentrated broth. Next time I’d cut the salt completely and just do pepper + garlic/onion powders.
