Ingredients
- 1 and 1/2 cups all-purpose flour plus 1 tablespoon to coat the blueberries
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup butter room temperature
- 2 tablespoons lemon zest from about 2 lemons
- 2 eggs room temperature
- 2 tablespoons lemon juice freshly squeezed
- 1/2 cup milk room temperature
- 1 cup blueberries fresh or frozen
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the sugar, butter, and lemon zest until light and fluffy.
- Mix in the eggs, one at a time, beating well after each addition, then mix in the lemon juice.
- Gradually add in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Toss the blueberries in 1 tablespoon of flour to coat, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

I don’t know… It seemed kinda dry for me. I followed the recipe exactly but didn’t get the fluffy texture she described.
Too much lemon, next time I’ll reduce it. Overall okay, not my fave.
