Ingredients
  

  • 1 and 1/2 cups all-purpose flour plus 1 tablespoon to coat the blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup butter room temperature
  • 2 tablespoons lemon zest from about 2 lemons
  • 2 eggs room temperature
  • 2 tablespoons lemon juice freshly squeezed
  • 1/2 cup milk room temperature
  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the sugar, butter, and lemon zest until light and fluffy.
  • Mix in the eggs, one at a time, beating well after each addition, then mix in the lemon juice.
  • Gradually add in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  • Toss the blueberries in 1 tablespoon of flour to coat, then gently fold them into the batter.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

    Not gonna lie, 60 minutes at 350°F felt short for my loaf pan. I baked closer to 70 and then it finally passed the toothpick test. Maybe my oven runs cool.

      I baked mine exactly 60 min and it came out perfect, so maybe your pan was thicker or darker? Also frozen blueberries can add moisture and slow browning a bit.
