A refreshing and tangy salad featuring shaved Brussels sprouts and juicy blood oranges, perfect for a light lunch or a colorful side dish.
Ingredients
- 300 grams Brussels sprouts Trimmed and thinly sliced
- 2 pieces Blood oranges Peeled and segmented
- 50 grams Feta cheese Crumbled
- 2 tablespoons Olive oil Extra virgin
- 1 tablespoon White wine vinegar As needed
- 1 pinch Salt To taste
- 1 pinch Black pepper To taste
Instructions
- In a large bowl, combine the thinly sliced Brussels sprouts and blood orange segments.
- Add the crumbled feta cheese into the bowl.
- Drizzle the olive oil and white wine vinegar over the salad.
- Season with salt and black pepper to taste, and gently toss everything together until well combined.
- Serve immediately, or chill in the refrigerator for up to 30 minutes before serving.

Not a fan… I thought the brussels sprouts would be cooked, but they were raw? Should’ve been clearer in the recipe! Kinda bitter for my taste too.
