Pumpkin Hummus
A delicious and seasonal twist on traditional hummus, perfect for autumn gatherings or as a healthy snack!
Ingredients
- 1 cup pumpkin puree canned or homemade
- 1 can chickpeas drained and rinsed
- 1/4 cup tahini
- 2 tablespoons olive oil extra virgin
- 1 clove garlic minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt or to taste
- 1 tablespoon lemon juice freshly squeezed
- 2-3 tablespoons water as needed for consistency
Instructions
- Add pumpkin puree, chickpeas, tahini, olive oil, garlic, cumin, cinnamon, salt, and lemon juice to a food processor.
- Process until smooth, scraping down the sides as necessary.
- Add water a tablespoon at a time until the desired consistency is reached.
- Taste and adjust seasoning if necessary.
- Serve immediately with pita bread, crackers, or fresh vegetables, or refrigerate for later use.
