Buffalo Chicken Stuffed Peppers are a bold and flavorful twist on the classic stuffed pepper. With spicy buffalo sauce, tender chicken, and a cheesy, creamy filling, these peppers are both satisfying and exciting, making them the perfect meal for those who love a little heat. The combination of spicy, savory, and creamy flavors, all tucked into a sweet bell pepper, creates a balanced and delicious dish that’s perfect for lunch, dinner, or game day.
What makes these stuffed peppers so special is how they blend the familiar, comforting taste of buffalo chicken with the wholesome crunch of a bell pepper. The filling is typically made with shredded cooked chicken, creamy cheese, and buffalo sauce, offering that familiar spicy kick with a rich, cheesy texture. The peppers themselves hold the filling perfectly, adding their own sweetness to balance the heat and ensuring every bite is satisfying.
This dish offers all the flavors of buffalo chicken wings but without the mess, making it a perfect option for those looking for a lower-carb or healthier alternative. The stuffed peppers are also incredibly versatile. You can adjust the level of spiciness by adding more or less buffalo sauce, and you can even make them milder with a dollop of ranch or blue cheese dressing on top.
Not only are they tasty, but Buffalo Chicken Stuffed Peppers are also a great make-ahead meal. The filling can be prepared in advance, and the peppers can be assembled and stored in the fridge until you’re ready to bake them. They also make for excellent leftovers, and the flavors continue to meld as they sit.
Whether you’re looking for a hearty weeknight dinner, a flavorful appetizer for a party, or a satisfying meal to serve at a gathering, these stuffed peppers deliver on taste and fun. The spicy buffalo chicken filling paired with the sweetness of the peppers creates a perfect balance of flavors that will keep you coming back for more.

This looked so good, but I messed it up. Cheese burnt on the top, sad face. 😢
Easy recipe, lots of flavor! My husband loved it too! Happy cooking!
Does it have to be bell peppers? Can I use other vegetables? 🤨
You could totally use zucchini or even eggplant! Just cut them the right way. 👍
Not bad, but I think the sauce was a bit much. Maybe less buffalo next time?
I loved it!!! So spicy and cheesy! 💖
I thought it was too tangy, my kids didn’t like it at all. Won’t be making again.
That’s too bad! I love the tang, but I guess kids have different tastes! Maybe try reducing the buffalo sauce next time?
Blaah, too much work for stuffed peppers. Just order pizza instead.
I totally get that! Sometimes cooking just feels like too much for a weeknight. Pizza is always a good fallback!
Nah, stuffed peppas are way more tasty than pizza. Plus, you know what goes in ’em!
Good recipe, but I used ground turkey instead of chicken and it was still yum.
I don’t really like ranch, so I left it out and added more cheese. Still turned out great!
These are amazing! My family devoured them! Will definitely make again.
