These Stuffed Sweet Potatoes are a delicious and healthy meal option filled with flavorful ingredients, providing a perfect balance of nutrients and taste.

Ingredients
  

  • 1 Sweet potato large, washed and scrubbed
  • 1/2 cup Black beans drained and rinsed
  • 1/4 cup Corn kernels fresh or frozen
  • 1/4 cup Salsa store-bought or homemade
  • 2 tablespoons Chopped cilantro fresh
  • 2 tablespoons Greek yogurt for garnish
  • to taste Salt and pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potato several times with a fork and place it on a baking sheet.
  • Bake the sweet potato for 45 minutes or until tender and cooked through.
  • Once cooked, remove the sweet potato from the oven and let it cool slightly.
  • Cut the sweet potato in half lengthwise and gently scoop out some flesh to create a space for the filling.
  • In a bowl, mix together black beans, corn kernels, salsa, and chopped cilantro.
