Ingredients
  

  • 1 pumpkin small,
  • 4 cups mixed greens
  • 1/4 cup pumpkin seeds
  • 1/4 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Cut the pumpkin into small cubes and remove the seeds. Place the pumpkin cubes on a baking sheet lined with parchment paper and drizzle with olive oil. Season with salt and pepper to taste. Toss to coat.
  • Roast the pumpkin in the preheated oven for 25-30 minutes, or until tender and lightly browned. Allow to cool.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, dijon mustard, salt, and pepper to make the dressing.

      Yep—regular mustard works! Dijon is just a bit milder, so start with a little (like 1 tsp) and taste the dressing before adding more. It’ll still be great with the balsamic.

      Good question! I’d call “1 small pumpkin” about 2–3 pounds (roughly 8–10 inches). If it’s tiny, you might need a bit more cubes; if it’s bigger, just adjust the amount to hit the ~2.5–3 cups cubed pumpkin range.

      Good point! A “small” pumpkin can vary a lot. I usually aim for about 2–2.5 lb (900–1150 g) for a small sugar pumpkin, and that gives plenty for the salad. Next time I’ll put a weight estimate in the recipe—sorry you had extra!

      Ugh, that happens! I’ve had the same issue when I don’t let the pumpkin cool—greens get all wilt-y. Glad it was still tasty though. Next time you could roast and cool (or even chill) the pumpkin before tossing.

      Maybe your oven too hot? I think 425 cooks pumpkin fast but still keep greens from wilting—mix everything and then just warm the dressing? Idk 😂 salad-y part gone, but feta and balsamic prob saved it.
