Ingredients
  

  • 1 pumpkin small,
  • 4 cups mixed greens
  • 1/4 cup pumpkin seeds
  • 1/4 cup feta cheese crumbled
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Cut the pumpkin into small cubes and remove the seeds. Place the pumpkin cubes on a baking sheet lined with parchment paper and drizzle with olive oil. Season with salt and pepper to taste. Toss to coat.

    I followed it exactly and it turned out bland. Maybe my pumpkin was watery? I ended up salting more and it improved a bit.

      Yeah, watery pumpkin can totally make it taste kind of flat. If it helps, try roasting a bit longer (until you see real browning/edges) and don’t be shy with a first round of seasoning while it’s still hot. Also balsamic can be a little sharp—adding a tiny pinch of sugar or more Dijon sometimes balances it. Glad salting helped though!
