Ingredients
  

  • 200 grams asparagus trimmed and cut into 2-inch pieces
  • 150 grams peas fresh or frozen
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions
 

  • Bring a pot of salted water to a boil. Add the asparagus and peas, and cook for about 2-3 minutes until just tender.
  • Drain the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process. Drain and pat dry.
  • In a large bowl, combine the asparagus, peas, and mint leaves.
  • Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss gently to combine.
  • Serve chilled or at room temperature.
