Instructions
Bring a pot of salted water to a boil. Add the asparagus and peas, and cook for about 2-3 minutes until just tender.
Drain the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process. Drain and pat dry.
In a large bowl, combine the asparagus, peas, and mint leaves.
Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss gently to combine.
