Some meals are meant to refresh you from the inside out, this Grilled Chicken and Sesame Cucumber Salad is one of them. It’s crisp, savory, and light, with just enough heartiness to leave you satisfied. Perfect for warm weather or anytime you’re craving something fresh and wholesome.
The base of this salad is simple: thinly sliced cucumbers tossed in a tangy-sweet sesame dressing. The cucumbers soak up the flavor beautifully, offering crunch and coolness with every bite. A combination of rice vinegar, soy sauce, toasted sesame oil, and a touch of honey gives the dish its signature balance of brightness and umami.
To keep things satisfying, we layer on slices of juicy grilled chicken. Marinated briefly in a soy-ginger mixture, the chicken gets lightly charred on the grill (or grill pan), adding smoky depth and protein to the plate. You can use chicken breasts or thighs, whatever you have on hand works here.
The final touches make this salad pop. A sprinkle of sesame seeds for nutty crunch, fresh herbs like cilantro or mint for brightness, and a few thin slices of red chili or scallion for a gentle kick. Want to bulk it up even more? Add cooked soba noodles or serve it with a scoop of jasmine rice for a more filling meal.
This dish is as easy to make as it is to love. Most of the prep can be done in advance, just toss everything together when you’re ready to eat. It travels well, too, making it a great option for picnics, office lunches, or summer potlucks.
Whether you’re looking to eat lighter or just trying to shake up your usual lunch routine, this Grilled Chicken and Sesame Cucumber Salad delivers on both flavor and satisfaction. It’s proof that healthy doesn’t have to be boring, and that the right balance of fresh ingredients and bold seasoning can turn a simple salad into a standout meal.

I tried it but didn’t like the honey in the salad. Too sweet for me.
Chicken and cucumber? Hmm… not my favorite combo. I prefer my cucumber in a sauce.
Simple and quick! My kids loved it. Will definitely make again.
I omitted the sesame oil becouse I thought it would be too strong. It still tasted good, but I wonder if I missed something.
I liked the idea but I’m not much for cucumbers. Can I use lettuce instead?
This is a game changer! The salad is so refreshing and the chicken is perfectly grilled. Top notch!
Totally agree! I made this last week and my family loved it too! The flavors are just amazing.
I don’t know, something about mixing honey with soy sauce is just weird. It tasted okay, but not my favorite.
I actually love the combination of honey and soy sauce! It gives such a unique flavor to dishes, but I get why it might be strange for some. Maybe you just need to try it again with a different ratio? 😊
I forgot to buy sesame seeds and it still tasted good… so if yer out, no worries.
Grill was too hot! Chicken got burned. 😩
I thought this recipe was for stir-fry? Where’s the rice? Disappointed.
Yummy! I love grilled chicken. I didn’t have green onions, so I just left them out. Still good.
So.simple and quick. I made it for my family and they loved it! Definitely making again.
This recipe was amazing! The chicken was juicy and the salad was so refreshing. Definitely a keeper!
I found the dressing a bit too sweet for my taste… maybe less honey next time?
Super easy! I love how quick it was to make after a long day. Will make again!
Too much garlic! My husband said I smelled like a pizza after this. Next time I’ll use less.
Eh… I guess it’s fine. My kids didn’t like the cucumbers tho. Eating salad is hard for them, lol.
I feel you! My kids turn their noses up at salads too. I just make them eat it anyway! 😂
It’s tough getting kids to eat veggies! Maybe adding some ranch dip could help? 🤔
Wouldn’t use that much oil next time. Felt greasy.
This dish was amazing! The chicken was very juicy and the salad was so refreshing.
I donno…. I think the salad needed something more. Maybe like avocados or sometthing?
I totally agree! The chicken was so juicy, I could barely handle how good it was!
Ugh! This recipe is too complicated! Just grill the chicken and serve with plain salad. No need for all those extra ingredients!
I get why you think it’s complicated, but the flavors are so good together! Plus, it’s really not that hard once you get going. Give it a try!
Yum!! 🤤 Best grilled chicken recipe I’ve tried!
I made this for a barbecue and everyone loved it! The chicken was so juicy. Definitely a keeper! 😊
Not sure about the honey in the salad. Seems weird with cucumbers. 🤔
This was amazing! The flavors worked so well together. I can’t believe how easy it was to make!
Yum! Chicken was tender. But do you really NEED the green onions? They seemed pointless.
I added some avocado to the salad and it was great! I like to experiment. Not sure how everyone else could have missed that!
Avocado in salad? That’s interesting! I usually stick to the recipe, but maybe I’ll try it. Sounds good!
Grill equals good food. Yum!
The chicken was a bit dry for me. I think I grilled it too long. But the salad was delicious!
Honestly, I didn’t think this would turn out well, but it was fantastic! My family loved it!
Hmmm… Paprika on chicken? Don’t think I’ll try that. Can’t trust people with their tastes these days.
I don’t know… paprika on chicken sounds weird. I prefer mine plain. But hey, to each their own.
Paprika gives such a nice flavor! You should give it a shot. You might be surprised!
