Ingredients
  

  • chicken
  • 4 chicken breast halves boneless, skinless
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Salad:
  • 2 cucumbers thinly sliced
  • 1/4 cup rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp sesame seeds
  • 2 Green onions chopped

Instructions
 

  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together olive oil, garlic, paprika, salt, and black pepper. Brush the mixture onto both sides of the chicken breast halves.
  • Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from grill and let rest for 5 minutes.
  • Meanwhile, in a large bowl, combine sliced cucumbers, rice vinegar, sesame oil, soy sauce, and honey. Toss to coat.
  • Sprinkle sesame seeds and chopped green onions over the cucumber mixture and toss again.
  • Slice the grilled chicken and serve atop the sesame cucumber salad.
  • Enjoy!
