Ingredients
- 4 chicken breasts
- 2 lemons
- 4 potatoes large,
- 4 cloves garlic
- 2 tbsp olive oil
- 1 tsp thyme dried
- 1 tsp rosemary dried
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, dried thyme, and dried rosemary.
- Heat olive oil in a skillet over medium heat. Place the chicken breasts in the skillet and cook for about 3 minutes on each side, until browned.
- Remove the chicken breasts from the skillet and set aside.
- Slice the lemons and potatoes into thin rounds. Crush the garlic cloves.
- Arrange the lemon slices in a single layer in the bottom of the skillet. Top with a layer of potato slices and crushed garlic.
- Place the chicken breasts on top of the potatoes.
- Cover the skillet with foil and transfer to the preheated oven. Bake for 35-40 minutes, until the chicken is cooked through and the potatoes are tender.
- Remove the foil and broil for an additional 2-3 minutes, until the chicken and potatoes are golden brown.
