Delicious beef and zucchini kabobs marinated with herbs and grilled to perfection.
Ingredients
- 1 lb beef sirloin cut into 1-inch cubes
- 2 zucchini sliced
- 1 red bell pepper cut into chunks
- 1 yellow bell pepper cut into chunks
- 1 onion cut into chunks
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp rosemary chopped, fresh
- 1 tbsp thyme chopped, fresh
- Salt and pepper to taste
Instructions
- In a bowl, combine the olive oil, garlic, rosemary, thyme, salt, and pepper. Mix well.
- Add the beef cubes to the marinade and toss to coat. Let marinate for at least 15 minutes.
- Preheat grill to medium heat.
- Thread the marinated beef, zucchini, bell peppers, and onion onto skewers.
- Grill the kabobs for about 10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness.
- Serve the kabobs hot and enjoy!
