A delicious and satisfying breakfast quesadilla with crispy bacon and scrambled eggs.

Ingredients
  

  • 4 slices bacon
  • 4 eggs
  • Salt and pepper black pepper, to taste
  • 4 flour tortillas
  • 1 cup shredded cheddar cheese
  • salsa for serving
  • cilantro for garnish

Instructions
 

  • Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
  • In a bowl, whisk the eggs and season with salt and black pepper.
  • In the same skillet, pour the whisked eggs and cook until scrambled.
  • Place a tortilla on a flat surface and sprinkle with shredded cheese. Top with half of the scrambled eggs and 2 slices of cooked bacon. Fold the tortilla in half.
  • Heat a separate skillet over medium heat and add the folded tortilla. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown. Repeat with the remaining tortillas and filling.
  • Serve the quesadillas with salsa and garnish with fresh cilantro.
