Iraqi Beef Kubba with Mint Yogurt is a comforting and flavorful dish that showcases the rich culinary heritage of Iraq. Kubba, also known as kibbeh in other parts of the Middle East, is a dish made from finely ground meat and bulgur or rice dough, often filled with a spiced meat mixture and shaped into dumplings or patties. In the Iraqi version, beef is commonly used and paired with a refreshing mint yogurt sauce that balances the richness of the kubba.
The outer shell of the kubba is made from ground beef mixed with soaked fine bulgur wheat, seasoned with salt and a hint of cinnamon or allspice. It is kneaded until it becomes dough-like in texture, which helps it hold together during frying or baking. The filling typically consists of sautéed ground beef cooked with onions, pine nuts, and a generous mix of spices like black pepper, cinnamon, and sometimes sumac or baharat. This creates a warm, savory interior full of texture and spice.
The kubba is formed by flattening a piece of the dough in your hand, adding a spoonful of the meat filling, and then sealing it into a football or oval shape. They are then either deep-fried to a crispy golden brown or baked for a lighter version. The contrast between the crispy outside and the soft, flavorful filling makes every bite satisfying.
What makes this dish truly stand out is the mint yogurt served on the side. It’s made by mixing plain yogurt with chopped fresh mint, garlic, and a touch of salt. The coolness of the yogurt complements the spices in the kubba perfectly and adds a refreshing note that brightens the entire dish.
Iraqi Beef Kubba with Mint Yogurt is ideal for gatherings or as part of a mezze spread. It’s filling, fragrant, and rooted in tradition. Whether you serve it as an appetizer or a main dish with rice and salad, it offers a delicious way to experience the depth and warmth of Iraqi home cooking.

Ingredients
- For the kubba:
- 500 g ground beef
- 1 cup fine bulgur
- 1 onion finely chopped
- 2 Garlic cloves minced
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- vegetable oil for frying
- mint yogurt
- 1 cup plain yogurt
- 1/4 cup mint leaves chopped, fresh
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the ground beef, bulgur, onion, garlic, cumin, cinnamon, salt, and pepper. Mix well until all the ingredients are fully incorporated.
- Wet your hands and take a golf ball-sized portion of the beef mixture. Form it into an oval shape, then use your finger to create a hollow space in the center. Repeat with the remaining mixture.
- Heat vegetable oil in a large frying pan over medium heat. Fry the kubbas in batches until golden brown and crispy on the outside, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
- In a small bowl, whisk together the yogurt, mint leaves, lemon juice, salt, and pepper.
- Serve the beef kubbas with the mint yogurt sauce on the side. Enjoy!
Yummm! 😋
My family gobbled these up! A bit messy, but totally worth it!
Absolutely loved this recipe! The flavors were so rich and the kubbas turned out perfectly crispy.
It was okay, but I think they needed more salt. I also used chicken instead of beef. not sure if it made a diff.
Using chicken instead of beef? That’s interesting! I think the salt is also key to this recipe. Maybe you can try next time with a bit more? Thanks for sharing your experience!
This is a great recipe! My family loved it!
I didn’t have bulgur, so I used rice. Still tasted okay but not the same. Gonna try it with bulgur next time.
Iraqi food is best food! But my kubbas were not round like yours. Tasted good tho! 😂
Don’t worry about the shape! I’ve had flat kubbas too, and they still taste amazing! 😂
I tried this recipe but it was way too greasy for my liking. Plus, I didn’t have mint so I used parsley instead. Not the same at all.
I don’t understand why everyone puts mint in everything! Parsley works fine. But too greasy? That’s a bummer!
Sorry to hear it was greasy! I always use paper towels to soak up some oil after frying. Maybe try it with the mint next time?
yum! I can’t believe how easy these were to make. Will definitely make again, but will add more spices next time! 🙂
This recipe made my kitchen smell amazing! It was such a fun experience making these with the kids.
I’ve never heard of kubba before. Is it really that good? My kids are picky eaters…
Sounds delicious! I can’t wait to try this with my kids too! 😋
I added a bit more garlic because I love it! Yum!
meh, too much cinnamon for my taste. I think I will skip it next time.
I actually love cinnamon! It adds such a nice flavor. Have you tried it with more mint yogurt? That might balance it out! 🙌
Honestly, didn’t like the mint yogurt that much. Just prefer it plain. The beef was good tho.
These kubbas were AMAZING! The flavor profile was on point. Definitely making them again!
This dish reminds me of my childhood! And the mint yogurt is just perfection.
Easy to make and so delicious! Thanks for sharing!
I don’t know what I did wrong, but these fell apart in the pan! Very disappointed.
These are amazing! So flavorful! I made them for my family and they loved it! 5 stars!
I tried this recipe but it didn’t turn out right. I think I messed up the bulgur or something. What did you do to get it so flavorful?
I’m so glad you loved them! The mint yogurt really makes a difference, doesn’t it?
I never knew kubba could be so good. I’ll be making this again for sure!
Looks good, but I don’t know… isn’t there a lot of flavor in those spices? I thought beef was supposed to be the main star.
I tried this recipe too and it was amazing! Never thought I would love kubba so much. Thanks for sharing!
Ugh, it’s just meat balls. Can’t even eat it. Why so much fuss?
Kubba? More like kuba-not! Didn’t turn out at all 🙁
Kuba-not? Haha, that’s funny! But hey, cooking can be hit or miss. Don’t give up! Maybe try less oil next time?
I’m sorry to hear that! What went wrong? Maybe it was the frying part. Sometimes it can be tricky if the oil isn’t hot enough.
These kubbas are a game changer! So flavorful and crispy! 😍
Why do people put mint in yogurt? So weird. Not for me, thanks.
Yum! Who knew mixing beef and yogurt could work? 👍
I never thought of that either! Can’t wait to try this recipe. 😊
Can someone tell me if I can bake these instead of frying? I hate the mess of oil everywhere!
Meh, was expecting more flavor. The ingredients sounded great but it fell flat. Needs something! Maybe chili? 😕
I hear you! I thought the same. A bit of chili powder might spice it up nicely! 🌶️
Really? I thought it was flavorful! But maybe you just need to season more? Try adding more spices! 😊
Great recipe! My kids loved them. Made them for dinner and they were gone in minutes! 😁
They were okay, but a bit dry for my taste. Maybe need more yogurt or something?
Is bulgur really necessary? Can’t I just use rice?
Yum! I made these for a potluck and everyone asked for the recipe. Definitely a keeper! 🍽
That’s amazing! I’m glad everyone loved it. 💖 Do you think it would work with chicken instead of beef?
I don’t know, doesn’t seem like all those flavors would go together. Mint in yogurt? Kinda weird.
I wouldn’t say these are authentic kubbas. The texture felt off to me. Maybe I did something wrong? Not sure if I’ll try again.
These kubbas are just divine! A big hit at our family dinner. Will make them again for sure!
I had a hard time with the mixing part, but it was worth it! Tasted amazing.
Mixing can be tough! But the end result is so worth it right? Glad you enjoyed it!
I had a lot of trouble with the mixing too. I dunno, maybe I did something wrong. What do you mean by mixing? Like with hands or spoon?
How do you fry it without burning? Mine were all black! Help!
Not what I expected. I thought they would be bigger. Plus I don’t like mint. But some people might love it.
I tried this but messed up the frying part and burned them. Still tasted alright though! A learning lesson.
