Why choose between savory fried chicken and a veggie-packed omelette when you can have both in one dish? The Fried Chicken and Vegetable Omelette is a hearty, flavorful breakfast (or brunch) that combines crispy, golden chicken with fluffy eggs and colorful sautéed vegetables. It’s a comforting way to start the day or even serve as a satisfying dinner.
The star of the show is the fried chicken, tender pieces of seasoned chicken breast or thigh, coated in a light, crispy batter and pan-fried until golden brown. You can use leftovers from dinner, or make it fresh for this recipe. Either way, it adds a rich, savory crunch that contrasts beautifully with the soft eggs and veggies.
For the omelette base, a mixture of whisked eggs is lightly seasoned and poured into a hot skillet. As the eggs begin to set, in go the sautéed vegetables: bell peppers, onions, spinach, or mushrooms, whatever you have on hand works well here. The veggies bring balance and freshness, cutting through the richness of the chicken.
Once the eggs are cooked to perfection, just set but still creamy, the crispy fried chicken is layered on top or gently folded into the center. A sprinkle of cheese, such as cheddar or mozzarella, can be added for extra comfort. Fold it over, let it finish for a minute or two, and you’re done.
The result is an omelette that’s bold, filling, and a bit indulgent, a meal that feels like a weekend treat but is easy enough to make on a weekday. Pair it with toast, fresh fruit, or even a light salad if you’re going the brunch route.
Whether you’re looking to use up leftover fried chicken or just craving something cozy and different, this omelette delivers on all fronts.

Yum! I added some cheese and it was a game changer. Really easy to make too!
Cheese sounds awesome! I bet it makes the omelette super cheesy and yummy! 🧀
Wow, this was so good! Gonna make it for brunch next week! 😍
This was super yummy! I added some cheese and it was even better!
Cheese? That’s a great idea! I’m gonna try that next time. Thanks for sharing!
I can’t believe how easy this was! My kids loved it! Will definitely make again!
Eh, it was alright. I think I put too much salt. Next time I won’t be so heavy-handed.
I made it for my kids and they loved it! But they don’t like peppers so I just left them out.
Glad your kids liked it! Omitting the peppers was a smart move. My kids are picky too!
Simple & easy! Can I use frozen chicken instead?
Why do you use chicken? Isn’t that too much? Should have just added more veggies, like mushrooms or somethin’!
5 stars for the easy instructions, but I thought it was too greasy.
Tasty! Will make again. 🙂
I tried it too! So good! Can’t believe how easy it was. ❤️
This was so delicious! A perfect way to use leftover chicken. My kids loved it!
Why fry chicken in an omelette? It’s weird. Stick to the basics, people!
So good! I added some cheese and it was the best breakfast EVER!
I don’t think cheese belongs in an omelet. Eggs should be the star, right?
Cheese sounds delish! I’ll try that next time for sure.
This recipe seems too fancy for me. I don’t cook with olive oil usually… can I use butter?
Butter would work just fine! Just be careful not to burn it. I think it’ll give the omelette a nice flavor too.
Olive oil is better for frying, tho. Butter can burn easier, you know? Just be cautious!
I tried this recipe but it didn’t turn out great. The chicken was dry and the omelette fell apart. 🙁
The cooking time is hilarious, way too fast! I messed up the omelette.
I tried this recipe but my omelette ended up all over the place… shoulda watched a video first. 😩
You probably just flipped it too soon! Just let it cook longer, and it’ll be fine. 😅
Don’t worry! Omelettes can be tricky. Maybe next time try cooking it on medium-low heat and let it set more before flipping.
Could you use bacon instead of chicken? I think that would be better.
Omelette? More like a chicken mess! LOL.
Not what I expected. The eggs were too runny for my taste.
This recipe is fantastic! The chicken is so juicy and the veggies add a nice crunch.
This was a disaster! The eggs didn’t cook right at all.
Why add so many peppers? It was too much for me. Also, eggs should be scrambled, not just laid over! 😒
This is the best omelette I’ve ever made! The chicken gives it such a nice flavor. Thanks for sharing!
This was awesome! My kids loved it. Will make again.
So glad to hear that! It’s a hit with the kiddos! 🍳
Why do u add salt before cooking? I thought that makes it tough.
My kids loved this! Easy recipe and not a lot of mess. Will make again.
I don’t know, fried chicken in an omelette? Sounds weird to me. 🤷♂️
So glad to hear! This recipe is a lifesaver for busy nights. My kids also enjoyed it. 😊
Why do you add bell peppers? They ruin the omelette for real. Stick with just chicken and eggs.
I think the bell peppers add a nice flavor and texture! Not everyone has to like them, but they make the dish colorful and tasty in my opinion.
I added some cheese and it took this to another level! Yum!
Easy to make, but my omelette was burnt on the outside and raw inside. Need to practice flipping.
It took forever to cook! And I think I added too much salt. 3 outta 5.
I didn’t have chicken, so I used sausage instead. Still tasty but not what I expected.
Sausage isn’t chicken! It’s a whole different flavor. You should try the chicken next time for the real thing!
I didn’t have red bell pepper, so I used a yellow one instead. Turned out good!
This was AMAZING! The chicken was so juicy and the peppers added a nice crunch. Def making it again!
I only had eggs and peppers, so I skipped the chicken. Still tasted fine.
The directions were a bit confusing. What do cook until ‘fully set’ mean? I winged it.
GREAT dish! My kids loved it. I added some cheese too.
This omelette is absolutely delicious! The chicken adds so much flavor. I’ll definitely make it again.
Looks good, but shouldn’t omelettes be made with cheese? Just sayin’…
I tried this recipe and it turned out amazing! The chicken really does make a difference. Thanks for sharing!
Yum! I love how easy this is. Perfect for breakfast or lunch. Thanks for sharing!
I tried this but it was a bit bland. Needs more spices or something.
Very easy to follow instructions, but mine ended up a bit burnt. Gotta watch it more.
I’m not even into omelettes, but this might change my mind! 🤔
Ew, omelettes are just a mishmash of eggs. But hey, maybe this one is different? 🤷♂️
Sounds so good! I love chicken and veggies together. Maybe I’ll give this a try!
so good!!!! 😋
I don’t understand how you fry chicken in an omelette… Seems like a waste of chicken.
Chicken for breakfast? Nah, not for me. I’ll stick to my cereal.
Mmm, this is like breakfast and lunch in one! Just a bit too salty for my taste. 🤔
I totally get that! Maybe try cutting back the salt next time? It’s still a great combo! 🥳
Too salty? I didn’t find it salty when I tried! But I guess everyone has different tastes. 🤷♂️
4 chicken breasts? Uh, I just used 2, and it was still good.
Something seems off about frying chicken and eggs together. Omelettes are supposed to be fluffy, not chewy.
I thought I could multitask and ended up burning the chicken. Whoops. Still tasted kinda good tho.
I think you could just use any veggies, not just bell pepper…totally improvisational! 😆
Absolutely! I love experimenting with different veggies! 🥕🥦
Yeah, but don’t you think bell peppers add a special flavor? 🤔
Looks delicious! How do I store the leftovers? Or should we eat it all? 🤔
Honestly, I didn’t expect much from this recipe. It was good, but not great. The chicken was a bit dry.
Is it really an omelette if it has chicken? I thought omelettes were just eggs 🤔
I think it’s still an omelette! Adding chicken makes it even better. 😊
Chicken and eggs, my 2 fav stuff! Perfect combo.
Sounds delish! Chicken and eggs rock together. Can’t wait to try it!
Good recipe but kinda plain. I added cheese and hot sauce, made it much better.
Wow. Just wow. Best omelette ever. I’m now a professional chef!
It was alright, but I think using a whole dozen eggs would make it richer. Just a thought.
Y’all, follow the instructions. Mine fell apart when I flipped it. #Fail
I tried it, but the chicken was undercooked. Gotta make sure to cut it smaller next time.
My kids loved it! finally made them eat veggies. Thanks for sharing!
Eh, I don’t know… kids eating veggies in an omelette? Seems too good to be true. Must be a miracle recipe!
That’s awesome! It’s always great when kids eat their veggies! What other tricks do you use?
YUM! Easy recipe. I gonna try it with mushrooms next time!
Chicken in an omelette? Never thought of that. This sounds weird, but I might give it a go.
I think it sounds great! Chicken adds protein and it’s like a savory twist on a classic dish. Can’t wait to try it!
Loved it! The chicken and veggies together in an omelette is genius! Best breakfast ever.
