Ingredients
  

  • 4 chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 6 eggs
  • salt
  • Pepper
  • olive oil

Instructions
 

  • Cut the chicken breasts into small pieces and season with salt and pepper.
  • Heat some olive oil in a pan and fry the chicken until cooked through. Remove from the pan and set aside.
  • In the same pan, add the sliced bell peppers and onion. Cook until softened.
  • Beat the eggs in a bowl and season with salt and pepper.
  • Pour the beaten eggs into the pan with the vegetables. Cook until the edges start to set.
  • Add the fried chicken on top of the omelette.
  • Flip one half of the omelette over the chicken and press down gently.
  • Cook for another minute until the omelette is fully set and golden brown.
