Ingredients
  

  • 1 large butternut squash peeled, seeded, and cubed
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup preferably pure
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine butternut squash cubes with olive oil, maple syrup, salt, and pepper. Toss to evenly coat.
  • Spread the squash onto a baking sheet in a single layer.
  • Roast in the preheated oven for 35-40 minutes, or until squash is tender and lightly caramelized, stirring halfway through.
  • Remove from oven and let cool for a few minutes before serving.

      Yeah, I think leaving it in longer could help with caramelization. I usually roast mine for at least 45 minutes! Just keep an eye on it.

      I get that mixing sweet and savory isn’t for everyone. But I think the maple syrup really enhances the flavor of the butternut squash! You should give it another shot, maybe with less syrup? 😄

      You don’t HAVE to peel it, but it might be tough. The skin can get chewy, especially when roasted. Maybe try it both ways and see what you like? Just a thought!
