Looking for a quick, nutritious breakfast that doesn’t sacrifice flavor? Spinach & Egg Scramble Toast is the perfect solution. This simple yet satisfying dish combines fluffy scrambled eggs with fresh spinach, all served over golden toasted bread for a delicious morning meal that’s ready in minutes.
Eggs are a breakfast staple, packed with protein and essential nutrients to keep you energized throughout the day. When paired with spinach, a powerhouse of vitamins A, C, and iron, you get a balanced bite that’s as healthy as it is tasty. The sautéed spinach adds a slight earthiness to the creamy scrambled eggs, while the toast provides a hearty base with just the right amount of crunch.
To make Spinach & Egg Scramble Toast, start by lightly toasting your favorite bread, sourdough, whole grain, or even brioche. While the bread is toasting, sauté a handful of fresh spinach in a little olive oil or butter until wilted. In a separate bowl, beat your eggs with a splash of milk, salt, and pepper. Pour them into the skillet with the spinach and gently stir over medium heat until the eggs are soft and just set.
Pile the warm scramble onto your toast and top with extras if you like—crumbled feta, a sprinkle of chili flakes, or sliced avocado all make great additions. Serve it with a cup of coffee or fresh juice, and you have a nourishing breakfast that’s perfect for busy mornings or leisurely brunches.
Whether you’re cooking for one or feeding the family, this dish is a delicious way to start the day on a wholesome note.

Quick and simple. Didn’t have fresh spinach so used frozen. Still turned out pretty good.
Tried it this morning and it came out really good. The timing is solid (2 min spinach is perfect). Next time I might add a pinch of garlic powder.
Hmm I tried once and my eggs came out a bit rubbery… maybe my heat was too high? Also I didn’t have spinach so I used kale and idk, it tasted bitter. Still, good idea!
Love this! I did the 2 minutes spinach too and it didn’t turn watery at all. Garlic powder would be 🔥—I’ll try that next.
Why use whole wheat? White bread is better. Trust me, I know.
This was a big hit with my kids! They love it! Who knew spinach could be so fun? 5 stars!!
Loved this recipe! It was so easy and tasty. Great way to use spinach!
Love that it’s healthy! Gave it to my kids but they didn’t like the greens. 😕
Is it healthy? Because I dunno about the butter and all. Can’t we just use olive oil?
How can 4 eggs fit on 4 slices? I mean, that’s like one egg per slice. Sounds wrong.
Actually, it works! You scramble the eggs and then split the mix across the four slices. One egg doesn’t just go on one slice. It’s all mixed together. 🙂
I don’t really like spinach but my partner loved this. I guess it’s good if you like greens. 3/5
3/5? I think that’s too generous. I made this and I still didn’t like the spinach. Maybe add bacon next time?
I used to hate spinach too, but this recipe made me a fan! It’s super tasty, especially with the cheese. Give it another try! 🍳
Spinach? Not for me. I used kale instead and it was ok.
This is an eggcellent recipe! 😂🥚
Makes no sense to cook spinach in a skillet. I just add it raw on top of the toast. Really should’ve thought this through.
Why spinach? It’s basically just weeds! I used kale instead, but it was still kinda bland.
This was sooo good! I added some hot sauce and it was fire! 🔥
Glad you loved it! Hot sauce is a great touch! 🔥
YUM! I had to make it for my kids and they loved it. I used cheddar cheese. Definitely a keeper!
This is so good! I added some garlic and it turned out great!
Yummm! My kids loved it. They usually don’t eat spinach!
This recipe was so easy! My kids loved it. Definitely a keeper!
This was amazing! I loved the cheese on top, it melted perfectly. Will make again!
Solid idea, but my eggs turned a little dry because I got distracted. Next time I’ll lower the heat and stir more gently.
This recipe looks amazing! I love spinach and eggs. Definitely giving it a try!
I don’t know why my eggs turned out weird, like not fluffy at all. What did I do wrong?
I don’t think it’s just the eggs, something else must’ve gone wrong. Did you overcook them?
Maybe your eggs were old? Fresh eggs fluff up better!
Why toast the bread? Makes it hard to eat! I just served everything on raw bread! 1 star for the idea.
Toasting the bread gives it a nice crunch! Otherwise, it can get too soggy with the eggs. But to each their own, I guess! 😊
My kids loved it! Finally got them to eat spinach without whining. 👍
Spinach? Kids eatin’ spinach without fuss? You must be a magician or somethin’. 🤔
That’s awesome! Sneaking in veggies is the best! 🥗
My toast got burned, don’t know what went wrong. But the eggs were yummy anyway. Might try again.
Don’t worry about the toast! It happens to the best of us. Eggs are the star anyway! 😊
Maybe your toaster is broken? You could try a pan instead next time! Good luck!
Isn’t toast just bread? Why you need to say toasted? Me no understand, but good taste. 3 stars
Not bad, but 4 eggs with only 2 cups spinach felt a bit egg-heavy. I might add more spinach or even some mushrooms.
What if I put chocolate on it? 🍫 Sounds funky, right?
Chocolate? That’s a bit weird for breakfast, but I guess if you like it, go for it! Not for me though. 😅
Why not? Chocolate makes everything better! Just like the eggs and spinach. I’d give it a try!
Delicious and nutritious! I feel like a health guru making this! 🥗✨
I dunno, the spinach was too wet. Should’ve cooked it longer. Maybe it’s just me?
Quick and easy! Perfect for a busy morning. Will definitely make again.
Just tried it and my kids loved it. I added some chopped tomatoes too. Will definitely make again!
Not sure why everyone loves this. The eggs got too dry for me and the spinach was a bit slimy.
I had the same issue with the eggs being dry! Try cooking them on lower heat next time, it helps a lot. Spinach can get slimy if overcooked too!
I don’t see how this will taste good. Spinach on toast? Really?
Spinach on toast might sound weird, but trust me, it’s super tasty! You should give it a try!
I dunno about mixing cheese with spinach. Seems a bit weird. But I guess I’ll try it.
Made this for breakfast and it was honestly so quick and tasty. The spinach stayed flavorful (not watery) and the scramble texture was perfect. I added extra pepper—no regrets.
Yum! This is my new breakfast! I added some garlic powder and it was perfect.
Did it with a pinch of garlic and it turned out bomb! 🤤 Perfect on a Sunday!
I love the garlic idea! I might just try it next time I make it. 🧄
Couldnt you just make a normal omelette instead? Seems weird.
Kinda bland, needs more seasoning. I think a little garlic woulda helped. 🤷♂️
Um, why do you use eggs for this? There’s gotta be a vegan option! 2 stars for not considering everyone.
You can substitute eggs with silken tofu. It’ll still be delicious!
Yummy! I added some hot sauce and it was amazing!
I made this for breakfast and it felt like a cafe meal. Whole wheat toast + melty cheese = yes. Would add a pinch of garlic powder next time.
It was alright. But who even eats toast with eggs? I’m more of a pancakes person.
Who cares about spinach! Toast is good but pancakes are the best! Ugh, I can’t even imagine eggs on toast. 🤮
Pancakes are great, but have you tried spinach with eggs? It’s actually really good! You might love it if you give it a chance!
This is such a simple yet delicious recipe! Added some tomatoes too, yum!
Looks good and all, but isn’t this just scrambled eggs on toast? Where’s the actual dish?
I totally agree! It’s so quick to make, and the addition of tomatoes sounds amazing.
I used feta cheese instead of shredded cheese and it was amazing! Will make again soon! 5 stars!
Yummy! I added some tomatoes too. So fresh and healthy!
I don’t like spinach at all. Can I use kale instead? Looking for alternatives.
Kale would work! It’s a bit more bitter though, but give it a try. Might even be better!
I tried it but I didn’t set a timer and burned my toast. Very sad.
Burnt toast is the worst! But at least the scramble sounds yummy. Just don’t let the bread get too dark, lol.
Oh no! That happens to the best of us. Next time, maybe set a timer? I’m sure it’ll be better!
Spinach scramble?! Sounds strange but actually good. Didn’t think I’d like the cheese but it worked!
Easy and quick breakfast = my jam! Also, I once tried it with kale instead of spinach, it was ok.
This seems way too healthy for breakfast. Give me pancakes any day.
I dunno, this recipe looks kinda good. Spinach is great and eggs are OK. Maybe I should give it a try sometime. But can’t beat pancakes, lol.
Healthy food is good for you, but pancakes are the best! You can have your do-gooder meals and I’ll stick to my syrupy goodness.
Yay! Just made this and it was sooo good. Gonna make it every morning now!
I didn’t have fresh spinach so I used frozen (squeezed it out). Turned out fine, though I think the timing needs adjusting because it was wetter than expected.
Nice save using frozen spinach! I agree on the timing—if it’s wetter, I usually cook it a bit longer or let it steam off in the pan before adding eggs.
Frozen spinach works but mine always comes out kinda watery too. Maybe next time reduce it more and squeeze harder? Also I think 2 minutes is too short—like my spinach takes 5. 🤷♀️
I think you forgot a step! The toast wasn’t ready in the end. Got mad!
Honestly, I was a bit skeptical about spinach in eggs, but this recipe surprised me. Very tasty!
I tried it but I found it kinda bland. Maybe add more spices?
Disappointing. Didn’t taste like much. Needs more flavor or something.
Honestly, it was okay but my eggs ended up too runny. Maybe I did it wrong. 🤔
This is my go-to breakfast now! So easy and tasty. I added some feta cheese and it was amazing!
Easy peasy! Made it for breakfast and my kids gobbled it up. Will do again.
Simple and healthy—exactly what I need. The instructions are straightforward and not overly fussy. Great for meal prep too.
Yum! I used kale instead of spinach, still good. Also added some salsa for spice!
Sounds like a great twist! Kale is super healthy too! I might try the salsa next time. Thanks for sharing!
Great recipe! I used avocado instead of butter spread 😍.
the recpices they show are the best ideas and they are always a big hit
Quick and easy! I’m not a great cook but I managed to make this without burning it. It’s super tasty. 4 stars!
Toasty good! I didn’t follow the recipe exactly tho, but it still turned out great!
That’s awesome! Sometimes the best dishes come from just winging it! What did you tweak?
Not sure how you can call it a recipe then. If you didn’t follow it, how do you know it was good?!
I didn’t have shredded cheese, so I skipped it. Surprisingly good anyway—kind of savory and light. Would recommend adding a sprinkle of paprika though.
I tried this but my eggs turned out too dry. Any tips?
Make sure to cook the eggs on low heat! High heat can dry them out real quick.
Eh. Just scrambled eggs on toast. Did I miss something? 2/5.
I think you’re missing the point! It’s more than just eggs on toast, there’s spinach and cheese for flavor. I love this combo, it’s not just basic! 5/5.
Honestly, I see what you mean, but spinach makes it healthier. Maybe you should try it with some spices or salsa? 3/5.
I rated it 2 stars before I read the salt/pepper line (jk). Seriously though, I think it needs more seasoning—maybe some chili flakes.
Totally get it—spinach can be super bland unless the eggs are properly seasoned. I’d add chili flakes or even a tiny dash of garlic powder.
2 stars gang unite 😅. I always end up needing more salt than the recipe suggests (especially if your cheese is mild).
easy and fast, but no way this fills me up! I need more than just toast for breakfast.
I used frozen spinach because that’s what I had. I should’ve squeezed it out more, but even then it was still tasty. Will make again with less liquid.
I left out the cheese and it was still delish! Just add more seasoning “cuz cheese makes it salty.
How many servings does this make? I need to feed a big family.
I don’t know? Maybe just double it? Should be enough for big family??
It makes 4 servings if you use all the ingredients. That’s enough for a small family!
Seems too simple. I like my breakfast with more pizzazz! Where’s the sriracha? 2/5
But sriracha could make it so much better! Why not mix it in? I’m not a fan of plain eggs. 😒
I think simplicity is key! Sometimes you don’t need all the fancy stuff. A little salt and pepper goes a long way. 😊
Instead of butter, can I use mayo?? Like, isn’t mayo good on toast?
Mayo on toast? That’s a bit weird, isn’t it? I mean, butter makes everything taste better. Not sure about using mayo here.
This sounds delish! I love spinach and eggs together.
simple and tastee! My kids loved it 😋
Isn’t toast just bread? Why can’t we just eat the eggs and spinach? Seems extra.
So easy and healthy! Doing this for meal prep next week!
Meh. I’m not sure I got the seasoning right. Also my toast burned a little, so maybe it was just me… would try again.
Same happened to me once 😅 I think I was a little shy on salt—eggs need more than you’d expect. Also burner was hotter than medium and my toast went from “golden” to “burnt” fast.
My toast always burns even when I follow the “medium” thing lol. Maybe try lower heat and watch like 1-2 mins. For seasoning, I usually salt the eggs first, then pepper at the end.
Not sure I get step 8—do you toast the bread while the eggs are cooking? Seems like it might cool down. Still, good idea overall.
Waste of time. Just scrambled eggs on toast are better. Who needs this?
1-2 minutes for wilting spinach sounds too fast. Mine needed like 5 minutes. Also whole wheat toast is kinda dry… but overall edible.
The toast part for me was kinda dry as well, like whole wheat needs more butter lol. I’d maybe toast less or do a thicker spread. Still tastes fine though!
Totally agree—2 minutes for spinach is usually way too short. I’m in the 4–6 minute range too, otherwise it’s not fully wilted.
Waste of time. Eggs got burnt and spinach was slimy. Never making this again!
I made this for breakfast! super refreshing and nutritious, will repeat!
Scrambled eggs are always a win. Fast recipe for breakfast!
Mmm… not for me. The spinach was all slimy. I think I’ll stick to eggs and bacon.
Easy recipe but I burnt my toast! 😅 Also not sure if you’re supposed to use fresh or frozen spinach…
Mmmm.. this is good but the eggs didn’t seem scrambled enough. Am I doing it wrong?
Maybe try cooking the eggs a bit longer? They need to be fully mixed up. Good luck!
Y’all, this recipe is fire! Who knew spinach could taste this good! Gonna serve it for brunch next weekend.
This is a fantastic recipe! Super easy and tastes amazing! I added some hot sauce for an extra kick.
Idk about this, my brother said it was gross. But I think it was alright.
This recipe is soooo good! I added some feta and it took it to the next level. Yum! 😋
Can I use frozen spinach? Asking for a friend.
Yeah, frozen spinach should work fine! Just make sure to thaw it and drain any excess water. Your friend will love it!
This is so delicious! I added some garlic and wow, it took it to the next level! 5 stars!
Very simple recipe! My kids devoured it! Thanks for sharing your skills! 👍
This looks like such a cozy, quick breakfast. Love that you wilt the spinach first—keeps it from being watery. I’ll definitely add the cheese!
Is the toast really required tho? Can I just eat the eggs and spinach? Sounds better!
Who needs toast? Just pile it on a plate and enjoy! Eggs are delish alone, trust me.
I mean, if you like eggs and spinach, go for it! The toast is just for some crunch, but it’s not mandatory.
Not bad, but I think it needs more spices. Maybe garlic or chili flakes?
Came out really slimy, guess I cooked the eggs too long. Will try again tho!
Don’t give up! Cooking is all about practice. Maybe next time try not to overcook the eggs, and it should be perfect!
Not too impressed. The eggs were bland, even with the salt and pepper. I think it needs more flavor.
This was so easy and delicious! Loved it!
Never made a scramble before, so I was nervous. But it turned out awesome! Thanks!
Simple and actually pretty tasty. The spinach wils perfectly in those ~2 minutes, and the eggs come out fluffy. I used cheddar—would recommend.
Cheddar is the move 😅 Next time I might add some garlic powder? Also 2 cups spinach feels like a lot—mine shrank down fast though, so it worked. Thanks!
I tried this and it really is quick—spinach went limp in like a minute and the eggs were super fluffy. I didn’t even measure, just added a bit more pepper at the end. Will make again!
Spinach on toast? Really? Sounds weird but I gave it a shot. It was actually good!
I never thought spinach could taste good on toast! Glad to hear you liked it!
Not my thing. Toast with avacado is better 4 sure.
Yum! But I added some diced tomatoes and it changed the whole game!
That sounds delicious! I love adding tomatoes to my dishes too. Great idea!
Best breakfast ever! I added some jalapeños for a kick and it was so good. Thank you!
I’m skeptical about whole wheat toast with scrambled eggs only—feels a little dry? But the spinach should help. Will add hot sauce to save it lol.
Honestly the toast can be a little dry if your eggs aren’t saucy enough—maybe use a little butter/oil in the skillet and add cheese (if you’re okay with it). Hot sauce sounds perfect though 😄
Easy casting spell! But y u need to cook the bread so long? Mine got burnt.
I think the cooking time can depend on the heat of your stove! Maybe try lower heat next time? I love this recipe!
I dunno, bread is supposed to be toasted, right? But maybe not burnt? Just watch it more closely!
My kids didn’t even notice the spinach, they gobbled it up! Yay for sneaky veggies!
Not bad but it felt a little bland until I used more salt than “to taste” (lol). Also I used frozen spinach and it held water—squeeze it next time.
Totally agree on the salt—“to taste” is doing a lot of work here 😄 I usually add it while scrambling so the flavor actually sticks.
I did frozen spinach once and it was soggy too. Next time I’ll squeeze it like you said—also I think I needed more cheese or else it tasted like… eggs with water.
Wow, who knew something so simple could be so good? Just wow.
Spinach in the eggs? I’m not sure that’s a good combo…but my kids loved it!
Too many steps for what is essentially just eggs on toast. I don’t wanna cook when I’m hungry!
Too many eggs for me, I think. Just one would have been enough.
But eggs are good for you! They add protein. Just leave them out if you don’t want too many.
I get it, that’s a lot of eggs! You could try just using one and maybe add more spinach for bulk.
Okay but why toast the bread *after* scrambling? I tried it both ways and I think doing toast first would help. Still good though.
Spinach on toast?? Why would anyone eat that? Gross!
Really? Spinach can be tasty, especially with eggs! Maybe you haven’t had it cooked right? Don’t knock it till you try it!
I actually think spinach on toast sounds kinda good! It’s healthy and filling. Give it a try! 😋
Bread + eggs + spinach = breakfast win. I added extra cheese and it was basically a brunch sandwich situation.
Yes!! That sounds like the perfect brunch upgrade—extra cheese makes everything better. 😄 I love how fast this is too.
I made this but mine got watery, I think my spinach was too wet. Still tasted good though—next time I’ll squeeze it a bit first. Also is whole wheat toast necessary? Kinda broke the directions, lol.
I’m confused: are we cooking the spinach before the eggs or after? The steps say remove it first, but I stirred mine in while the eggs were still raw and it turned out fine. Maybe I got lucky?
I swapped the eggs for tofu because I’m vegan! Turned out yummy too!
That’s awesome! Tofu is a great alternative. Glad it worked out for you!
Why toast the bread separately? I tried to do it in the skillet at the same time and it got messy. But the egg-spinach combo tastes great—just keep it organized.
I not good at cooking but this was pretty simple! Thanks!
This is such a simple meal. I’m a lazy cook and I can’t believe how good it turned out with basically pantry stuff.
The instructions are straightforward—love that. I also like that you toast the bread separately so it doesn’t get soggy. Great quick meal.
Yes! Separately toasting the bread is the make-or-break step. I made this and it stayed nice and crisp even after topping—great quick meal idea.
Pretty solid, but my eggs overcooked a bit even though I stayed on medium. Next time I’ll pull them earlier. Still a great way to use spinach.
Wow, “pat of butter” is vague 😅 but I improvised and it worked. Texture was fluffy, spinach was not soggy. Would recommend.
This was one of those ‘I can’t believe how easy this is’ recipes. Salt/pepper at the end made a huge difference. 10/10 for weekday breakfast.
