A delicious and healthy breakfast option made with spinach and eggs.

Ingredients
  

  • 4 slices whole wheat bread
  • 4 eggs large,
  • 2 cups spinach fresh
  • 1/2 cup shredded cheese optional
  • Salt and pepper to taste
  • butter or oil for cooking

Instructions
 

  • Heat a non-stick skillet over medium heat.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Remove the spinach from the skillet and set aside.
  • In the same skillet, melt a pat of butter or heat some oil.
  • Crack the eggs into the skillet and scramble them.
  • Add the cooked spinach and shredded cheese (if using) to the eggs and mix well.
  • Season with salt and pepper to taste.
  • Toast the slices of bread.
  • Spread butter or your favorite spread on the toasted bread slices.
  • Divide the egg and spinach mixture evenly among the slices of toast.
  • Serve hot and enjoy!

    How can 4 eggs fit on 4 slices? I mean, that’s like one egg per slice. Sounds wrong.

      Actually, it works! You scramble the eggs and then split the mix across the four slices. One egg doesn’t just go on one slice. It’s all mixed together. 🙂

    Not sure why everyone loves this. The eggs got too dry for me and the spinach was a bit slimy.

      I had the same issue with the eggs being dry! Try cooking them on lower heat next time, it helps a lot. Spinach can get slimy if overcooked too!

    I left out the cheese and it was still delish! Just add more seasoning “cuz cheese makes it salty.
