Ingredients
  

  • 4 slices whole wheat bread
  • 4 eggs large,
  • 2 cups spinach fresh
  • 1/2 cup shredded cheese optional
  • Salt and pepper to taste
  • butter or oil for cooking

Instructions
 

  • Heat a non-stick skillet over medium heat.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Remove the spinach from the skillet and set aside.
  • In the same skillet, melt a pat of butter or heat some oil.
  • Crack the eggs into the skillet and scramble them.
  • Add the cooked spinach and shredded cheese (if using) to the eggs and mix well.
  • Season with salt and pepper to taste.
  • Toast the slices of bread.
  • Spread butter or your favorite spread on the toasted bread slices.
  • Divide the egg and spinach mixture evenly among the slices of toast.
