Looking for a nutritious breakfast that’s both quick and satisfying? Spinach scramble toast is a perfect choice. It’s warm, comforting, and packed with protein, fiber, and flavor, all in under 15 minutes.
This dish starts with a base of golden, toasted bread. Whether you prefer rustic sourdough, hearty multigrain, or even a slice of rye, the toast serves as the perfect platform for the fluffy, savory scramble. The star of the show is the egg and spinach combination, light, creamy scrambled eggs loaded with vibrant green spinach that’s been just lightly wilted to retain its color and nutrients.
To make it, simply sauté fresh spinach in a bit of olive oil or butter until it begins to soften. Then, pour in whisked eggs seasoned with salt and pepper, and gently stir until soft curds form. The key is to cook the eggs low and slow, so they stay tender and don’t dry out. You can also fold in a little crumbled feta or grated cheese for extra flavor if you like.
Pile the warm scramble onto your toasted bread and finish with a sprinkle of chili flakes, herbs like parsley or chives, or even a drizzle of hot sauce if you like a little kick. Add sliced avocado or tomato on the side to turn it into a well-rounded meal.
Spinach scramble toast is ideal for busy mornings, lazy weekends, or even a quick weeknight dinner. It’s light enough to keep you energized but filling enough to satisfy. Plus, it’s easy to customize — use kale instead of spinach, add mushrooms, or top with a poached egg for a twist.
Whether you’re eating solo or serving a small crowd, this simple recipe proves that healthy food can also be fast and incredibly delicious. Keep it in your rotation for when you need something that checks all the boxes: quick, easy, healthy, and tasty.

My kids loved it, they devoured it! Will make again for sure!
This is so yummy! I added some garlic and it was delish.
I dunno. Spinach and eggs… not my thing. I think I’ll stick to my cereal.
Sounds great! Garlic makes everything better! I’ve got to try it with garlic next time.
Real simple to make, even I can do it! Thx for shareing.
You’re welcome! It’s super easy and a great way to start the day. Enjoy your cooking!
I never cook with spinach, but this recipe was simple. Still, I think addin’ bacon would be better.
I didn’t have whole wheat bread, used white instead. Still turned out great!
White bread works too! Glad it turned out great for you! 😊
Not sure if I did it right, but mine turned out mushy. Will try less spinach next time.
Not sure what I did wrong but it was pretty bland. Also, not enough salt!
Spinach? Eww. But my kids loved it, so I guess it’s good? 🤷♂️
spinach is good for health but i hate how it tastes. nah.
I dunno, didn’t turn out as good as I thought. Maybe too much spinach?
My kids loved it! They usually hate spinach, so this one is a win
I don’t eat eggs, so I swapped them for tofu. Still turned out great! 💪
This was super easy and the kids loved it! Will definitely make again.
I dunno, I think 4 eggs is too much for one person. How can anyone eat all that?
Isn’t this just eggs on bread? I don’t get the hype around this dish.
I used kale instead of spinach and it worked fine. Just an idea!
How do you scramble eggs? Mine always get too tough. Any tips?
Yum! But I think it needs more cheese for flavor. Just sayin’.
Wow, this looks so easy and healthy! Can’t wait to try it!
Not very filling… maybe needs some meat? Thought this would be better.
Super easy and quick! Perfect for busy mornings. Thanks for the recipe!
Eggs and toast? classic combo. U can’t go wrong!
This is so delicious! The spinach adds a nice flavor to the eggs.
Cheese was a game-changer! Hubby devoured it! 🧀
I thought this recipe was gonna be hard, but was so simple! Yay!
That’s awesome to hear! I love when a recipe surprises you. This one is a favorite in my house!
Really? It seemed kinda complicated with all the steps. I thought I’d mess up the eggs! Did you add anything else?
Ithink u should add more cheese! It will make it yummier! 🙂
Not sure what I did wrong, the eggs were kinda rubbery :-/ anyone else have that issue?
I had the same problem! Maybe the heat was too high? I usually cook mine on low to avoid that rubbery texture.
I tried making this for breakfast, but my eggs ended up scrambled all over the place.
Maybe try keeping the heat lower next time? Scambled eggs are better that way!
Meh, kinda bland. I don’t see what the fuss is about. Just eggs and spinach.
Easy peasy, I just mixed everything up and it was good! Perfect weekday breakfast.
This was so easy and delicious! Perfect for breakfast. Will make again!
Sounds good but I don’t eat eggs. What can I replace them with?
Why not just skip it? More spinach is good too!
You can try using silken tofu or chickpea flour as an egg substitute! Both work great in scrambles.
Do I really need to toast the bread? Seems like extra work for nothin! 🤷♂️
I tried this but the eggs seemed too dry. Maybe less cooking next time?
Spinach on toast? Weird combo but surprisingly tasty! Will try it again.
Wow, this is delish! Never thought I would like spinach on toast.
Came out perfect! I love how the spinach adds flavor. Definitely making again.
Spinach? Really? Not a fan. Gave it a 2 for the toast tho.
