Ingredients
  

  • 2 cups corn kernels fresh or canned
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice freshly squeezed
  • 1/4 cup cilantro chopped
  • to taste Salt and pepper

Instructions
 

  • In a large bowl, combine the corn kernels, cherry tomatoes, cucumber, and red onion.
  • Drizzle the olive oil and lime juice over the vegetables.

      Yep, that tracks—cucumber can add a lot of extra water, especially if it’s not patted dry. Next time you might salt-dice it for 10 min and squeeze out the liquid (or use less cucumber). Your chilling time sounds right though!

    Corn salad without bacon is a bold choice 😅. I know it’s probably not meant to be heavy, but I think it needs some crunch/umami. Otherwise solid.

    Real talk: canned corn tastes kinda tinny sometimes. If you can, use fresh corn. But the recipe is easy and clean.

      Totally agree—canned corn can taste a little tinny. Fresh corn makes it pop. I tried letting it sit 30 min like the instructions say and the lime + cilantro really mellow everything out.

      Watery salad usually means you used too much lime juice? I’d try cutting the lime in half, maybe add a little mayo to thicken it up 😅. Also, canned corn can be wetter—drain it good. Good job tho!

      That makes sense—cucumber can get really watery, especially if it’s not seeded well. Next time, I usually scoop out the seeds (or pat the cubes dry with a paper towel) before mixing. You can also chill it briefly and drain any extra liquid.
