Ingredients
- 1 cup orzo pasta preferably whole wheat
- 2 tablespoons olive oil extra virgin recommended
- 8 ounces mushrooms sliced
- 1 clove garlic minced
- 1/2 cup parmesan cheese grated
- 1/4 cup heavy cream
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon black pepper freshly ground
Instructions
- Cook the orzo in a pot of salted boiling water until al dente, according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes.
- Add garlic to the skillet and sauté for about 1 minute until fragrant.
- Stir in the cooked orzo, grated parmesan, heavy cream, salt, and pepper. Mix until the orzo is well coated and the cheese has melted.
- Serve hot, garnished with extra parmesan cheese and freshly ground black pepper, if desired.

Not bad, but why use so much cream? Can we make it healthier without losing flavor? Just a thought.
I don’t know, it kinda turned out bland for me. I think it could use some more spices or something.
