I’ve found using a bit more tamarind paste (or even thinning real tamarind pulp) helps bring the deeper flavor through. Also, did you stir right after adding the sparkling water? I accidentally used bottled lime juice (not fresh) and it came out kinda flat. Also I ran out of sparkling water so I used club soda… still okay but not as vibrant.
