Ingredients
- 2 kg leg of lamb bone-in
- 4 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice freshly squeezed
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon fresh thyme chopped
- to taste salt and pepper
- 1.5 kg baby potatoes halved
Instructions
- Preheat the oven to 180°C (350°F).
- In a small bowl, mix the minced garlic, olive oil, lemon juice, rosemary, thyme, salt, and pepper.
- Place the leg of lamb in a roasting pan and rub the garlic and herb mixture all over the lamb.
- Place the halved baby potatoes around the lamb in the roasting pan.
