Greek Easter Roast Lamb is a traditional dish made with succulent lamb, marinated with herbs and spices, then roasted to perfection. It’s a festive meal often served with potatoes and greens.

Ingredients
  

  • 2 kg leg of lamb bone-in
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • to taste salt and pepper
  • 1.5 kg baby potatoes halved

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a small bowl, mix the minced garlic, olive oil, lemon juice, rosemary, thyme, salt, and pepper.
  • Place the leg of lamb in a roasting pan and rub the garlic and herb mixture all over the lamb.
  • Place the halved baby potatoes around the lamb in the roasting pan.
  • Roast the lamb in the preheated oven for approximately 3 hours, or until the internal temperature reaches 65°C (150°F) for medium.
  • Remove from the oven and let the lamb rest for 15 minutes before carving and serving.
