Ingredients
  

  • 500 grams lamb shoulder cut into cubes
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 large onion chopped
  • 2 cups beef broth
  • 1 cup carrots sliced
  • 1 cup potatoes diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the lamb pieces and brown on all sides.
  • Remove the lamb from the pot and set aside. Add the garlic and onion to the pot and sauté for about 5 minutes, until softened.
  • Return the lamb to the pot. Stir in the carrots, potatoes, tomato paste, thyme, salt, and black pepper. Pour in the beef broth and bring to a boil.
  • Reduce the heat to low, cover, and simmer for about 2 hours, or until the lamb is tender and the vegetables are cooked through.
  • Taste and adjust seasoning with more salt and pepper if needed. Serve hot.
