Lamb stew is a timeless comfort food that brings together tender chunks of lamb, root vegetables, and a rich broth in one deeply satisfying dish. It’s a staple of many traditional cuisines, especially Irish and Mediterranean, known for its ability to warm you from the inside out. Whether you’re making it for a cozy winter dinner or a Sunday family meal, lamb stew delivers big flavor with minimal fuss.
The heart of the stew is, of course, the lamb. Shoulder or leg cuts are ideal, as they become meltingly tender when simmered slowly over low heat. The meat is usually seared first to lock in flavor, then combined with aromatics like onions, garlic, and herbs such as rosemary, thyme, or bay leaves. Carrots and potatoes are classic additions, but parsnips, turnips, or even peas can be used to add depth and variety.
A rich stock or broth forms the base of the stew, often enhanced with a splash of red wine or a spoonful of tomato paste to deepen the flavor. As it simmers, the ingredients break down and blend together, creating a thick, savory gravy that clings to every bite. The result is a dish that’s as hearty as it is comforting.
Lamb stew is traditionally served with crusty bread, mashed potatoes, or even a bowl of buttered noodles. It’s a complete meal in one pot, making cleanup easy and leftovers even better the next day. The flavors continue to develop as it sits, making it a great make-ahead option for busy weeks or gatherings.
This stew isn’t flashy, but that’s part of its charm. It’s honest, nourishing food made with care and simple ingredients. Each spoonful is filled with warmth, making lamb stew a favorite during the colder months or whenever you need a little extra comfort.

Ingredients
- 500 grams lamb shoulder cut into cubes
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 large onion chopped
- 2 cups beef broth
- 1 cup carrots sliced
- 1 cup potatoes diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper or to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb pieces and brown on all sides.
- Remove the lamb from the pot and set aside. Add the garlic and onion to the pot and sauté for about 5 minutes, until softened.
- Return the lamb to the pot. Stir in the carrots, potatoes, tomato paste, thyme, salt, and black pepper. Pour in the beef broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 2 hours, or until the lamb is tender and the vegetables are cooked through.
- Taste and adjust seasoning with more salt and pepper if needed. Serve hot.
Delicious and cozy! Perfect for cold nights. I just throw everything in and let it simmer. So easy!
I love this stew! It’s so hearty and warm. I’ve added a few herbs from my garden for extra flavor!
Looks good, but I don’t trust lamb. Isn’t it too tough? I might stick to beef.
I dunno, didn’t taste good to me. It was too salty! I think I put too much of the salt. Not making it again.
This stew is amazing! I added a pinch of rosemary and it was a hit with my family. Will make again!
I wasn’t sure about using beef broth instead of lamb broth. It turned out okay but felt a bit off. Next time I’ll try it with lamb broth.
Aint no stew like a lamb stew! Yum!
Perfect for winter days! 🥘
Absolutely! Lamb stew is the best, especially with crusty bread on the side! 🍞
I dunno, isn’t beef stew just as good? 🤔 Lamb seems kinda expensive for a stew.
Eww, I don’t like lamb too gamy for me! I used beef instead. Still turned out good tho.
That’s interesting! I usually find lamb really tasty, but I guess everyone has their preferences. Glad the beef worked out for you!
Lamb’s not that bad! Maybe you just had a bad batch. Beef in lamb stew? Isn’t that a bit off? 🤔
Who in their right mind uses beef broth for lamb? Should be lamb broth, duh! 👎
Ugh, who cares about flavors? Just use what’s on hand! 🤷♂️
I don’t see the problem? Beef broth adds depth of flavor. Lamb’s rich enough as it is!
Too much time to cook for just stew. I don’t have that kind of patience. 😒
2 hours ain’t that long for something so yum. Just put it on and chill for a bit! 😅
I get it, waiting for stew can feel like forever! But the flavor is worth it. Maybe try a quicker recipe next time?
Lamb stew? Never heard of that. Is lamb good? I thought only cow meat was used for stew.
It took a long time to cook, but totally worth it! My family loved it, thanks!
SO YUMMY! I made it for my family and they loved it! Just what I needed for a cold night.
I tried this recipe but it came out a bit bland. I added some chili flakes which helped a lot.
This seems easy enough! Can’t wait to try it, I love stew that sticks to your ribs! 😍
Absolutely delicious! This is the best lamb stew I’ve ever made. Will definitely be making it again!
I added extra potatoes instead of carrots and it turned out great! Love it!
Extra potatoes? That ain’t how the recipe works! You gotta stick to it for the real taste.
That sounds yummy! I’ve never thought of swapping carrots for potatoes! Gonna try that next time!
Meh, it was okay. Just another lamb dish, nothing special, ya know?
I disagree! I think lamb stew can be amazing if cooked right. Did you use good quality lamb?
Followed the recipe, but it was too salty for my taste. Any way to fix that next time?
I wasn’t sure about adding tomato paste, but it really works! Tastes so good, I’m impress!
I was skeptical about tomato paste too, but it really does change the flavor! Glad you liked it!
This stew is excellent! The lamb just melts in your mouth. Will definitely make it again.
