Instructions
Heat the olive oil in a large pot over medium heat. Add the lamb pieces and brown on all sides.
Remove the lamb from the pot and set aside. Add the garlic and onion to the pot and sauté for about 5 minutes, until softened.
Return the lamb to the pot. Stir in the carrots, potatoes, tomato paste, thyme, salt, and black pepper. Pour in the beef broth and bring to a boil.
Reduce the heat to low, cover, and simmer for about 2 hours, or until the lamb is tender and the vegetables are cooked through.
Taste and adjust seasoning with more salt and pepper if needed. Serve hot.
