Preheat the oven to 180°C (350°F).
In a small bowl, mix the minced garlic, olive oil, lemon juice, rosemary, thyme, salt, and pepper.
Place the leg of lamb in a roasting pan and rub the garlic and herb mixture all over the lamb.
Place the halved baby potatoes around the lamb in the roasting pan.
Roast the lamb in the preheated oven for approximately 3 hours, or until the internal temperature reaches 65°C (150°F) for medium.
Remove from the oven and let the lamb rest for 15 minutes before carving and serving.
