Ingredients
  

  • 1 lb sardines cleaned and scaled, fresh
  • 1 Lemon sliced
  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic minced
  • 1 tbsp parsley chopped, fresh
  • 1 tbsp dill chopped, fresh
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Rinse the sardines under cold water and pat them dry with a paper towel.
  • Place the sardines in a baking dish and season with salt and pepper.
  • In a small bowl, mix together the olive oil, minced garlic, chopped parsley, chopped dill, and dried oregano.
  • Spoon the herb mixture over the sardines, making sure to coat them evenly.
  • Top the sardines with lemon slices.

    Lemon on fish is good but I forgot to pat them dry and mine kinda steamed. Still tasty though. My bad!

    Mine got a little dry on top—maybe my oven runs hot. Still tasted good though, just not as juicy.

      Ugh, that sounds exactly like an oven temp issue. If the top dries out, I’d try covering the dish loosely with foil for the first 10 minutes, then uncover to brown for the last bit. Also maybe check yours at 15 min—15 seems like the sweet spot for 1 lb sardines.

    Good and healthy, but next time I’ll bump the oregano a bit and maybe add a pinch of red pepper flakes for some heat.

    Do you really mean 2 cloves garlic? I used 2 tablespoons by mistake and it was way too garlicky. Still ate it, but… yikes. Lesson learned.
