Deliciously spiced pumpkin scones perfect for autumn.
Ingredients
- 2 cups all-purpose flour
- 1/3 cup brown sugar packed
- 1 tablespoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup unsalted butter cold, cut into cubes
- 1/2 cup pumpkin puree
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, brown sugar, baking powder, pumpkin pie spice, and salt.
- Add the cold butter cubes and cut into the dry ingredients using a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a separate bowl, mix together the pumpkin puree, heavy cream, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Transfer the dough to a floured surface and shape it into a thick disc. Cut into 8 wedges.
- Place the scones onto the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
- Remove from oven and let cool on a wire rack before serving. Ad frosting if desired.
