Ingredients
  

  • 2 chicken breasts boneless, skinless, thinly sliced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup water
  • 3/4 cup orzo pasta
  • 3 cups spinach fresh
  • 1 Lemon juice
  • 1 Lemon zest

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 4-5 minutes. Remove chicken from pot and set aside.
  • In the same pot, add onion and garlic. Cook until onion is translucent, about 2-3 minutes.
  • Add chicken broth and water to the pot. Bring to a boil.
  • Stir in orzo pasta and let cook for 8-10 minutes, until pasta is al dente.
  • Add cooked chicken back to the pot. Stir in spinach, lemon juice, and lemon zest. Cook for an additional 2-3 minutes, until spinach is wilted.
  • Serve hot and enjoy!
