- Gradually add the sugar, a tablespoon at a time, while continuing to beat on high speed until stiff, glossy peaks form.
- Mix in the vanilla extract until just combined.
- Transfer the meringue to a piping bag fitted with a round tip.
- Pipe ghost shapes onto the prepared baking sheet.
- Place two chocolate chips on each ghost for eyes.
