At its core, chocolate mousse is a balance between richness and lightness. You want that deep cocoa flavor to come through while keeping the texture fluffy and smooth. The trick lies in choosing the right chocolate, go for something with at least 60% cocoa for a bold, bittersweet base. That slightly intense edge gets mellowed out once you fold in the whipped cream.

A splash of espresso or strong brewed coffee adds depth to the flavor without tasting like coffee. It simply enhances the chocolate, making it more complex and satisfying. If you’re making this for kids, feel free to skip it or use a bit of vanilla extract instead.

Eggs are traditionally used for richness and structure. If you’re going the classic French route, you’ll beat egg yolks with sugar until pale and thick, then fold them into melted chocolate. Separately, the egg whites get whipped until soft peaks form and folded in at the end to give the mousse its signature airy feel. Ingredients
  

  • 1 cup heavy cream
  • 8 ounces semisweet chocolate chopped
  • 3 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 4 egg whites large,
  • pinch salt

Instructions
 

  • In a small saucepan, heat 1/2 cup of the heavy cream until it just begins to bubble around the edges.
  • Remove the saucepan from heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth. Set aside to cool for 10 minutes.
  • In a medium mixing bowl, beat the remaining 1/2 cup of heavy cream until soft peaks form. Add the sugar and vanilla extract and continue beating until stiff peaks form.
  • In another medium mixing bowl, beat the egg whites and salt until stiff peaks form.
  • Fold the cooled chocolate mixture into the whipped cream, then fold in the beaten egg whites, taking care not to overmix.
  • Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours, until set.
  • Serve chilled and enjoy!
