Ingredients
  

  • 1 cup bulgur
  • 2 cups water boiling
  • 2 cups chopped tomatoes
  • 1 cup cucumbers diced
  • 1 cup parsley chopped fresh
  • 1/4 cup mint chopped fresh
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions
 

  • Place the bulgur in a large bowl and pour the boiling water over it. Let it sit for about 10 minutes or until the water is absorbed and the bulgur is tender.
  • Add the tomatoes, cucumbers, parsley, and mint to the bowl with the bulgur.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Pour the dressing over the salad and toss to combine.
  • Taste and adjust the seasoning if needed.
  • Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  • Serve chilled and enjoy!

    I think 1 cup bulgur to 2 cups water is too much? Mine soaked up forever. By the time it was tender, the salad felt heavy.

      I agree—2 cups water for 1 cup bulgur can make it too wet. I usually start with closer to 1 to 1.5 cups, and I only do 10 min if it’s medium bulgur. Chilling makes it feel even heavier too.

      Mine came out perfect with 2 cups—maybe your bulgur was a different size or brand? If it’s coarse, it might need less/ more soaking time. Also make sure to squeeze the cucumber a bit so it doesn’t add extra water.
