Delicious breakfast burrito packed with pork and spinach
Ingredients
- 4 large tortillas
- 1 pound ground pork
- 1 1/2 cups spinach chopped
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup chopped cilantro
- 4 eggs
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the ground pork and cook until browned and cooked through.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the diced onions and cook until softened.
- Add the chopped spinach and cook until wilted.
- In a separate bowl, whisk the eggs with salt and pepper.
- Pour the whisked eggs into the skillet with the spinach and onions.
- Cook the eggs until scrambled.
- Return the cooked pork to the skillet and mix well.
- Warm the tortillas in a separate skillet or in the microwave.
- Divide the pork and spinach mixture evenly among the tortillas.
- Top with shredded cheddar cheese, diced tomatoes, and chopped cilantro.
- Roll up the tortillas into burritos.
- Serve warm and enjoy!
