Ingredients
  

  • 4 tortilla large,
  • 1 pound ground pork
  • 1 1/2 cup spinach chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup onions diced
  • 1/4 cup cilantro chopped
  • 4 eggs
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • In a large skillet, heat the olive oil over medium heat.
  • Add the ground pork and cook until browned and cooked through.
  • Remove the pork from the skillet and set aside.
  • In the same skillet, add the diced onions and cook until softened.
  • Add the chopped spinach and cook until wilted.
  • In a separate bowl, whisk the eggs with salt and pepper.
  • Pour the whisked eggs into the skillet with the spinach and onions.
  • Cook the eggs until scrambled.
  • Return the cooked pork to the skillet and mix well.
  • Warm the tortillas in a separate skillet or in the microwave.
