Add the chopped spinach and cook until wilted.
In a separate bowl, whisk the eggs with salt and pepper.
Pour the whisked eggs into the skillet with the spinach and onions.
Cook the eggs until scrambled.
Return the cooked pork to the skillet and mix well.
Warm the tortillas in a separate skillet or in the microwave.
Divide the pork and spinach mixture evenly among the tortillas.
Top with shredded cheddar cheese, diced tomatoes, and chopped cilantro.
Roll up the tortillas into burritos.
