Tabbouleh Salad is a refreshing and vibrant dish that brings together the fresh flavors of parsley, tomatoes, and bulgur wheat, all dressed in a zesty lemony dressing. Originating from the Middle East, this salad is not only healthy but also bursting with freshness, making it a perfect choice for light lunches, side dishes, or even as a topping for grilled meats.
At its core, tabbouleh is about balance. The chewy bulgur wheat provides texture and heartiness, while fresh, finely chopped parsley brings a burst of bright, herbal flavor. The tomatoes offer juiciness, and the cucumbers, if added, add a refreshing crunch. The dressing, made from olive oil, fresh lemon juice, and a touch of salt and pepper, ties it all together, infusing the ingredients with a tangy richness.
What makes tabbouleh so special is its versatility. The ingredients can be easily adjusted to suit personal taste. Some like to load up on parsley, while others prefer more tomatoes or cucumbers. The refreshing, clean flavors make it easy to pair with almost any meal, and it’s a great addition to a Mediterranean spread, alongside hummus, pita, or grilled meats. It’s equally delicious on its own as a light, healthy lunch.
This salad is also highly nutritious. Rich in fiber, antioxidants, and vitamins, it’s a great way to get your daily dose of veggies in a delicious way. Plus, it’s naturally vegan, making it a suitable option for various dietary preferences.
Tabbouleh Salad is not just about taste – it’s also about celebrating fresh ingredients and simple, wholesome cooking. Whether you’re looking for a vibrant addition to a meal or a refreshing snack on a hot day, tabbouleh fits the bill with its crisp textures and bright, citrusy notes.

- In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Taste and adjust the seasoning if needed.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.

I think 1 cup bulgur to 2 cups water is too much? Mine soaked up forever. By the time it was tender, the salad felt heavy.
I agree—2 cups water for 1 cup bulgur can make it too wet. I usually start with closer to 1 to 1.5 cups, and I only do 10 min if it’s medium bulgur. Chilling makes it feel even heavier too.
Mine came out perfect with 2 cups—maybe your bulgur was a different size or brand? If it’s coarse, it might need less/ more soaking time. Also make sure to squeeze the cucumber a bit so it doesn’t add extra water.
I used quinoa instead of bulgur, still taste great but not traditional, right?
Good flavor, but my bulgur came out a little chewy. Next time I’ll check it around the 8-minute mark and maybe use slightly less water.
Your instructions were clear but I forgot the garlic 😅 Still turned out good!
This is so fresh and herby—exactly what I want in summer. I let it chill longer than 1 hour and the flavors really melded.
Good salad. Easy to make! 👍
I don’t get why people like this salad. It’s just herbs and stuff.
Delicious salad! I added chickpeas for some protein. Just perfect for summer!
Chickpeas in tabbouleh? Interesting twist! I usually keep it traditional, but I might try that next time.
Sounds good and all, but I think the bulgur is enough, no need for chickpeas. Just saying.
Wait, is tabbouleh supposed to be made with rice or bulgur? My friend the chef said rice but this recipe seems good too.
Can’t wait to try this! I’ve got all the ingredients ready. 🙂
Hope it turns out better than the last time I tried. Mine was too mushy and bland. :/
Yay! You’re gonna love it! It’s so refreshing. 🙂
Absolutely love this recipe! So fresh and flavorful. Perfect for summer!
I totally agree! This salad is a game changer! I make it every week now.
But isn’t bulgur just fancy oatmeal? I don’t see the big deal.
hMm, tabouleh is ok but why not add more spice? Needs a kick!
This is the best tabbouleh recipe I’ve ever tried! So fresh and tasty. Five stars!
So good. Period.
Quick and easy! I love how healthy this is. Will definitely make again. Also, it’s great for picnics! ⭐⭐⭐⭐⭐
Quick and easy! Perfect for summer picnics, but I think it needs more garlic next time.
Delicious but I don’t know if I trust raw garlic, lol. Maybe I’ll roast it next time.
This recipe is fantastic! So fresh and easy. My family loved it!
Looks great but sounds like too much work. Do you have a simpler recipe?
My friend said bulgur is just wheat and who even eats that? Well, I tried it anyway. Not bad!
So easy and simple! My kids even liked it, well, mostly! I will make this again for sure! 4 stars.
I don’t get why everyone loves this so much. It was just okay for me. Too much parsley maybe?
This is the best tabbouleh recipe I’ve ever tried! So fresh and delicious. I added a bit more mint and it was perfect! Definitely a 5!
Made this for lunch and it was super fresh—those lemony flavors really pop. I used a little extra mint and it was honestly perfect.
Pretty bland, needs more spices or something. Not gonna make again.
This salad is amazing! So fresh and easy to make. I doubled the mint and it was perfect!
I tried this salad too, but it didn’t turn out great for me. Maybe I messed up the dressing? The mint feels a little too strong, a lil less next time!
So refreshing! Perfect for summer. I used quinoa instead of bulgur because that’s what I had. Still delicious!
It sounds good but I don’t know if I trust bulgur. Isn’t that just fancy oats?
Bulgur is not oats! It’s cracked wheat and totally different! It’s really good in salads. You should give it a try!
Why do people like this salad? It’s just veggies and grains. 1 star for me, not my kind of food.
Salad is healthy!! But I hear ya, not for everyone. Other peeps love the crunch of the veggies. More for them, right?
I understand where you’re coming from, but this salad is all about freshness and flavor! Have you tried it with some feta or nuts? It might surprise you!
This looks confusing… I just toss everything together and hope for the best. Works out sometimes. 😂
