  • 2 medium zucchini grated
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1/4 cup green onions chopped
  • 1 tsp salt
  • 1 tsp black pepper freshly ground

      Uh… frying scares you? Fair, but the oil is literally why they crisp. If you bake, they might turn out kinda mushy unless you squeeze the zucchini REALLY dry. Maybe use less batter-y moisture and don’t overcrowd the pan.

      Yes—baking should work! I’ve done something similar by forming patties and baking on a lightly oiled sheet at ~425°F (220°C) until crisp, flipping halfway. You’ll probably get less “fritter” browning than frying, but it’ll still be tasty and much lighter.

Even after squeezing, the little bit of extra moisture can come out once it hits the hot pan, making it seem “watery.” Next time, squeeze a bit longer and don’t skip draining the towel. Also, make sure your skillet is fully hot before adding the batter—if it’s not hot enough, they can break down and weep. If it still feels thick at first, that’s normal; the mix often loosens as it cooks. Maybe add 1–2 extra tbsp flour if your zucchini was really juicy.
