Ingredients

- 2 cups Tomato sauce marinara
- 1 cup ricotta cheese
- 2 cups mozzarella cheese shredded
- 1 cup parmesan cheese grated
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper freshly ground
Instructions

- Cook the ziti pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the diced zucchini to the skillet and cook until tender, about 5-7 minutes.
- Stir in the tomato sauce, dried oregano, salt, and black pepper. Simmer for 5 minutes.
- In a large mixing bowl, combine the cooked ziti pasta, zucchini and tomato sauce mixture, and ricotta cheese. Mix well.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Ricotta lumpy is normal-ish if it wasn’t room temp. I usually stir it in warm sauce so it smooths out. Still glad it tasted good though!

Glad the flavor came through! If your ziti was firm after 30 min, I’d try par-cooking it a bit longer next time or bake closer to 35 min. Also, make sure the oven is actually at 375 (oven thermometers help).
Pretty good. I used a jarred marinara (couldn’t be bothered) and it still tasted great. Next time I might salt the zucchini a bit to get more moisture out, but overall solid.

The instructions say simmer the sauce 5 minutes—mine tasted like it needed more time. I simmered 15 and the zucchini flavor integrated better. Lesson learned.

uhh i think 375 is wrong? maybe mine needed higher heat. either way it was ok but i kept it in longer and the cheese got weird. idk maybe i did something lol
