Ingredients
- 100 g rice noodles Soaked in warm water for 20 minutes and drained
- 200 g chicken breast Cut into thin slices
- 2 tablespoons vegetable oil
- 2 cloves garlic Minced
- 1 egg Lightly beaten
- 50 g bean sprouts
- 2 tablespoons fish sauce
- 1 tablespoon tamarind paste
- 1 tablespoon soy sauce
- 2 teaspoons sugar
- 30 g roasted peanuts Chopped
- 1 lime Cut into wedges for serving
Instructions
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the minced garlic and sliced chicken breast, stir-frying until the chicken is cooked through.
- Push the chicken to the side of the pan and pour the lightly beaten egg into the center. Cook until the egg is set, then mix with the chicken.
- Add the soaked rice noodles, bean sprouts, fish sauce, tamarind paste, soy sauce, and sugar. Stir-fry until the noodles are tender and well coated with the sauce.
- Serve hot, garnished with chopped roasted peanuts and lime wedges on the side.

Not sure why it says to soak the noodles. I just boiled them and they were fine.
Soaking helps soften the noodles better. Boiling might work, but soaking is the traditional way!
